Best Ever Zucchini Bread

Ingredients
  • 1¾ cups all-purpose flour
  • 1⅓ cups whole wheat pastry flour or white wheat flour
  • 1½ tsp cinnamon
  • ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 eggs
  • 1½ cups sugar
  • 1 cup canola oil
  • 4 cups grated fresh zucchini
  • 2 tsp vanilla extract
  • 1 cup chopped walnuts
Instructions
  1. Preheat oven to 375 degrees F. Mist 2 loaf pans with nonstick cooking spray and set aside.
  2. In a large bowl, whisk to combine the flours, cinnamon, baking powder, baking soda, and salt. In a separate medium bowl, whisk to combine the eggs, sugar, oil, zucchini, and vanilla until well-combined. Pour the wet ingredients into the dry; mix until very little dry ingredient remains unincorporated. Fold in the walnuts.
  3. Pour half of the batter into each of the prepared loaf pans and bake for 45-55 minutes or until an inserted toothpick is cleanly removed and top of loaf is golden. Allow to cool before slicing.
