Pumpkin Oatmeal Breakfast Bars

Ingredients
  • 4 cups rolled oats
  • ½ cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 4 tsp cinnamon
  • 2 large eggs
  • 1 (15 oz) can pumpkin puree
  • ½ cup unsweetened almond milk
  • ½ cup pure maple syrup
  • ⅓ cup brown sugar
  • 4 tsp pure vanilla extract
  • ⅓ cup mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. Mist two 8-inch x 8-inch baking dishes with nonstick cooking spray. Set aside.
  2. In a large bowl, whisk together the oats, flour, baking powder, baking soda, and cinnamon until well-combined. Mix in the eggs, pumpkin, almond milk, syrup, sugar, and vanilla until fully incorporated. Fold in the chocolate chips.
  3. Spread half of the mixture into the bottom of each baking dish, spreading into an even layer, reaching each edge and corner of the baking dish and smoothing the top.
  4. Bake for 25-30 minutes. Let cool before slicing into 8 bars.
