6 Can Chicken Tortilla Soup

Serves: 5 servings (2 cups each)
 
Ingredients
  • 2 (15 oz) cans low-sodium chicken broth
  • 1 (10.5 oz) can reduced sodium cream of chicken
  • 1 (15 oz) can low-sodium corn, drained
  • 1 (15 oz) can low sodium black beans, drained and rinsed
  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)
  • 12 oz rotisserie chicken, shredded
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 oz tortilla chips, crushed
  • 1 avocado, diced
  • juice of 1 lime
  • ¼ cup chopped cilantro
Instructions
  1. Combine broth, cream of chicken, corn, beans, Rotel,chicken, chili powder, and cumin in a stock pot over medium heat. Bring to a simmer. Reduce heat to medium-low and simmer for 20 minutes. Serve topped with crushed tortilla chips, ¼ avocado, squeeze of lime juice, and cilantro.
