Epic breakfast…for dinner

Just for fun, here are just a FEW questions my students have asked in our first 2 classes:

  • How often should you have a bowel movement?
  • Is high-fructose corn syrup really worse than sugar?
  • Is stevia safe?
  • Why does the Atkins diet help people lose weight?
  • How many calories do I need to gain weight?
  • Do carbohydrates make you fat?
  • Why does the government subsidize corn  if the MyPyramid is aiming to reduce high-fructose corn syrup consumption?

Do I have some smart, inquisitive pupils or what? I guess I should now mention that the first 2 chapters we’ve gone over have nothing to do with any of those questions (and those were just a FEW), but the class discussion is priceless. And some of the false information floating around out there is just plain’ol SCARY!

So while teaching is going well, a 6pm start time has caused dinners to be very…rushed. And that is quite the understatement.

Let me preface this next part by saying that I am notoriously late, always. Not a lot, but a little. And when you’re the teacher, that just doesn’t fly. So I’m really trying to be ON TIME…if only to class.

Monday night I shoveled down a bowl of cereal and a banana before jetting off to class. Last night, I made an epic breakfast for dinner that I had to eat in, literally, 2 minutes. Of course, had I not taken the time to photograph this lovely meal, I would’ve had 4 minutes or so, but I had to do this French toast justice. Because I very well know that pretty pictures make you more likely to believe my rave reviews…riiiight?

Lightened Up Creme Brulee French Toast from Skinny Taste

1 cup unpacked brown sugar
1/4 cup water
cooking spray
10 oz Challah bread, sliced 1 inch thick
2 large eggs
1 cup egg substitute
1-1/2 cups 1% milk
1 1/2 tsp vanilla extract
1 tsp Meyers rum (optional) – I omitted
1/4 tsp salt
1 tsp powdered sugar
1 tsp cinnamon


In a small heavy saucepan melt brown sugar and water over moderate-low heat, stirring, until smooth and melted, about 1 minute, then pour into a 13 x 9-inch baking dish coated with cooking spray.

Arrange bread slices in one layer in baking dish, squeezing them slightly to fit.

In a large bowl whisk together eggs, egg substitute, milk, vanilla, rum, 1/2 tsp cinnamon, and salt until combined well and pour evenly over bread. Cover and refrigerate at least 8 hours or overnight.

Preheat oven to 350 F and bring bread to room temperature. Bake uncovered, in middle of oven until puffed and edges are pale golden, 40 to 50 minutes. Top with cinnamon and powdered sugar. Serves 6.

Nutrition Information (per serving): 342 calories; 4.5 g. fat; 84 mg. cholesterol; 378 mg. sodium; 64.6 g. carbohydrate; 1 g. fiber; 12.2 g. protein

Result: YUM-O! When I saw Renee rave about this recipe on her blog, I knew I had to try it. As if the title of the recipe wasn’t tempting enough. I made this in the morning and we had it for supper, but you could just as easily, and more traditionally, make it at night to serve the following morning. Super simple, absolutely delicious!

I want to continue making nutritious meals on Monday and Wednesday nights, but I think 1) I need to utilize the crock pot on these nights (or eat leftovers), and 2) I may need to go lighter on lunch and have a small, early dinner (4:30ish) before class and a snack afterward. I did the later last night — one piece of French toast before class and a fresh strawberry and banana smoothie for afterward. It worked well. 🙂

I am looking forward to a long workout and another healthy, homemade meal tonight. Lily is going to daycare so that after work I can get in a long run not feel guilty about it. Plus, she could use the exercise, too! 😉

    I would say eggs of some sort are both my favorite “go-to” and my favorite “breakfast for dinner”.
    I’m tackling french toast one of these days… can you believe I’ve never made it? Ridiculous…

    That looks good–like weekend brunch good. When I’m in a rush I either eat a bowl of cereal or a quesadilla, which takes not time at all to whip up.

    awe…I hope you are able to find some balance with the new schedule and not feel so rushed! Im sure in time it will come!! πŸ™‚ It sounds like you are loving teaching though! Those are some great, great questions your students had!

    Oh, that french toast is wonderful, isn’t it? I had to make my own challah, because I don’t have anywhere around me to buy it. It’s nice, cuz you do all the prep ahead of time, then just bake. I used brandy in mine….sooo sooo good. πŸ™‚

    I have the same problem – class twice a week from 6:00 pm – 8:40 pm. I try to eat a smaller lunch on those days and I usually pack a sandwich or some cereal and milk to have before class – when I get home, I have a small snack if I need it – piece of fruit, etc.

    I can’t go till 9:00 pm until dinner – I would go crazy!

    This french toast looks amazing! French toast is something I don’t make that often for some reason. This recipe inspired me. yum!

    My favorite “grab and go” meal is probably hummus with just about anything. I try to keep chopped fruits & veggies in my fridge (but not too many so they won’t lose their crispness).

    For a take-with-you meal, I enjoy tuna salad (made with relish not mayo), putting that on the bottom of a tupperware, adding the greens and apple slices on top, and then mixing it all together when it’s ready to eat. The tuna salad adds the moisture, but by putting it on the bottom you don’t get wilted greens.

    My in-laws love to make leftover quesadillas/burritos – they just throw whatever leftovers they have into a tortilla and have instant dinner.

    I love their questions. I once was a guest speaker for a 9th grade health class at a private school. My favorite question was when a girl asked me if she had to take the green pills her mom bought so that she could get all the fruits and veggie servings she needs a day so easily. She told me the pills are gross and wanted a good excuse to not have to take them. I told her to try eating real fruits and veggies instead but drew the line there because I did not want the mom calling back in about me later on if she took offense. Glad you are able to come up with options for making the most of that rushed time. I think using the crock pot will really help out.

    That looks so good! I love breakfast for dinner. Usually it’s super quick too. My favorite is an omelet with something on the side…. Maybe a sweet potato. Gosh it’s been too long since I had a sweet potato.

    Mmmm…..breakfast for dinner is my FAVORITE. πŸ™‚ I love cooking up eggs for dinner after I get home from work. An easy go-to meal for me (that I love, especially in the winter!) is savory oats. I mix in some veggies and laughing cow cheese, and it takes all of 3 minutes!

    We get a lot of questions like this whenever we have a nutrition lecture and it’s kind of scary how little future MD’s know about nutrition! The classes on it aren’t taught very well either, so that just adds to my fears.

    I love having breakfast for dinner and this is just the kind of thing that I crave when I do! Bookmarked!

    oo i would say roasted veg and cottage cheese is my fav go-to meal… nice crispy veggies to dip in creamy protein filled yumness!

    LOVE breakfast for dinner as something quick and easy (and satisfying) to fix! And those are some great questions. Although I did get a little chuckle out of the poop one.

    The first question got me totally excited! As my friends know, I love to talk about poop! It’s so normal – I hate that no one ever talks about it!

    On a totally different note the creme brulee French toast looks amazing! I don’t really like French toast, or any breakfast food really, but creme brulee gets me every time!
