fall forward, summer back

September 1st…heeeeeeellllllooooo!

It’s hard to believe this weekend kicks off college football…I cut the most delicious cantaloupe and strawberries last night. What’s not to love about this time of year…the weather and produce of summer, and the comfort and fun of fall. Ahhhh.. 🙂

But this weekend, fall will be in full gear with football and week 1 of the Prevention Chili Contest! I can hardly wait! 😀

Zucchini Ricotta Flatbread Pizza from Yum Ventures & Eat, Live, Run

4 pieces of flatbread or flour tortillas
1 cup low fat ricotta cheese
2 cloves of garlic, minced
1/2 1/4 teaspoon salt
1/2 teaspoon pepper
2 1 large zucchinis
1 cup grated 2% mozzarella cheese, shredded
Red pepper flakes to taste

Directions:

Preheat oven to 450° F.

In a bowl, combine the ricotta, garlic, salt and pepper. Mix until thoroughly combined.

Grate the zucchini and dry with a couple of paper towels, removing most of the released moisture.

Put the grated zucchini in a bowl and add the grated mozzarella. Combine well will a little salt and pepper.

Place flatbread on a wire rack or baking sheet. On your flatbread, spread a layer of the ricotta cheese, divided among the 4 flatbread.

Top with a layer of the zucchini, about 3/4 of an inch thick (or again, just separate between pizzas evenly)

Sprinkle zucchini with red pepper flakes.

Bake in the oven for 12 – 15 minutes, or until the edges of your flatbread are crisp and the cheese has begun to golden. Serves 4.

Nutrition Information (per serving): 301 calories; 9.5 g. fat; 35 mg. cholesterol; 829 mg. sodium; 37.5 g. carbohydrate; 1.5 g. fiber; 21.8 g. protein

Result: Delicious! And so simple! These whip together in 5 minutes and only cook for 12-15 — love it! Mr. Prevention and our friend loved them…I will be making again! 😀

It’s my long day today…but I am meeting with 2 local dietitians tonight (over martinis 😉 ) to discuss a marketing and business plan to offer nutrition consultation to local endocrinology and nephrology offices! I’m very excited! Here goes nothing! 😀

Question: What’s your dream job? If you were to go to school for something TODAY, what would it be?

I’ve been toying with the idea of going back to school for nursing. There’s online options and I think it’d be great…but I’m just not sure. I don’t want to be an RN in the traditional sense, but I do want to get into management at some point in my career, preferably in diabetes. I think with being an RD -and- an RN…it would be hard not to succeed! Decisions, decisions!

But first things first…squeezing in a run before work after last night’s workout turned into arm curls with a few wings and beer at Buffalo Wild Wings. The things we do for love…*eye roll* Like I said on Facebook last night…our new proximity to Buffalo Wild Wings is nothing short of dangerous!!

    My dream job is to be a freelance writer, which I do think is within the realm of possibility someday. I’d love to go back to school and get my MFA in Creative Nonfiction. At this point I have a master’s in Women’s Studies, which is actually more useful than you might imagine!

    a friend of mine recently went back to school for her nursing degree, and is loving the program. She went to undergrad for business, so it’s quite a change!

    I wouldn’t want to be doing anything else with my career. I love being a reporter and love helping my hubby with his production company. Hopefully one day I’ll put that all aside for a while and be a mommy…that’s truly my dream job.

    I made a variation of that zucchini pizza the other night and it was so so good!

    If I could go back to school (read: someone else is paying) I’d get my MFA in creative writing.

    Yea. Love this time of year too. I don’t want all the fresh fruit to go away after summer, BUT I cannot wait for crisp air, football (Go UGA!), and all things pumpkin.

    Wow….DELICIOUS looking pizza! I love pizza that sneak in veggies – pizza is always good, so it’s a great way to sneak in veggies. ๐Ÿ™‚

    That is so exciting you’re thinking about nursing school! You are young, and you’re right – with being a RD AND an RN? Well, your opportunities would be endless!

    If I could have any job, I would do something with kids and fitness. Not like a personal trainer for kids, per se, but some type of program that works with kids and shows them how being active can be fun – and so can eating healthy. Just have to find said program. ๐Ÿ˜‰

    What beautiful strawberries! I do love me some fresh fruit, and this really is the perfect time of year. I’m glad you are enjoying its abundance! And of course, your zucchini ricotta flatbread is superb!

    Lucky for me, I’m already in school for what I want to do! I’m still toying with the idea of getting a Master’s in Nutrition, though – I can’t decide whether to spring for it next year or get a job (and $$!) first. Decisions! How exciting that you’re thinking about nursing! It’s a great field and I know you’d make a great manager ๐Ÿ™‚

    Hurray for college football! The hubby is giddy with excitement (and is looking to re-live last years results). :0) My dream job would be something related to wine (or a vineyard) and a wine-and-food cookbook writer. I would LOVE to go to sommelier school. Alas, I am working on my Masters in Political Science…surely that can help somehow!

    Wow so crazy that September is already here! It definitely feels like fall with the rain coming down. I hope my tomatoes get enough sun to turn red. I’m actually going to start a class in the fall related to fitness training. I wish I could take more that one class at a time but with full time work this will be enough for now.

    Thats an easy question for me. I would go to school to be a teacher. Im pretty sure thats what I was born to be. I correct grammar all the time, and am all about teaching people lessons. ๐Ÿ™‚ It’s the only job that wouldnt be about the money for me.

    HA!! So you’re really close to a Bw3?? Yikes. That would be dangerous for us too. When we lived in our apartment we were way too close to an ice cream shop, within walking distance, NOT GOOD! But hey, like you said, sometimes love comes in ahead, and hopefully he’ll give up a workout for YOU sometime ๐Ÿ™‚

    Dream job? I would go back to business school and get my MBA, then start my own ice cream business. HEck, I may do that anyway, we’ll see. Are you in?! We could be partners!

    While I think I’m all set on schooling for now, I do have aspirations to get my PhD in public health or a related field. My dream job is health promotion. I will get there soon!

    That pizza looks delicious. Good luck with your meeting with those dietitians. Sounds like you have a great idea and I know it is much needed. If I could go to school for anything it would be a PhD in nutritional epidemiology and one day I hope to actually be near a school that offers it. If not, I am going to stick with general nutrition for my PhD. I am almost finished my MA in Human Relations. Only 2 classes to go (one is next week, but the other is stats in Jan), my internship which I am just starting, and comps, and then all done.

    Whohoo for Football!

    I just graduated with a M.Ed and am struggling to find a job in this economy. I had a great one before moving away for DH’s job and I figured when we moved back, I would have tons of opportunities with an advanced degree. Needless to say, I’m bitter about going back to school.

    Before I graduated I did become interested in Nutrition and being an RD. Also, with all the job postings for RN’s- that sounds perfect right now.
