Hawaiian Chicken Sandwiches + Weekly Menu


We don’t know our neighbors well…at all. It’s actually kind of sad.

We wave. We’re polite. We’ve even exchanged insurance information when one of them backed into Mr. Prevention’s car just weeks after we moved in. But we don’t know them.

Imagine my surprise when we received a graduation party invite to our neighbor’s daughter’s graduation party. Do we go? Do we not? What’s the “right” thing to do in a situation like that? I’m not even sure I could pick the daughter out of line-up...though the picture on the invite would help…


Then, the graduate’s father approached us Friday while we were winding down with a cold brew and some soccer with Lily in the front lawn. He informed us that he had been smoking ribs (and freezing them) for the past 5 weeks in preparation of the party. Up went a huge tent. In came slushie machines. Announced was that there would be a DJ. They were going ALL out…

I got up yesterday morning and poured my cup of iced coffee as I meandered out to the porch. There was my neighbor, standing at his smoker on his front porch. He flipped over a slab of ribs at about 7:48am and I could hear him say, “Ohhh yeah! Now THAT’S what I’m talkin’ about!”



Before we headed over to our friend’s for a cookout, we had to stop by the graduation party that was in full-swing by 5pm. The ribs smelled…awesome. Leftovers were offered and I graciously accepted any that were leftover at the end of the night 🙂

Unlike my neighbor who spent weeks devoted to cooking the meat for his daughter’s graduation, I spent about 3 minutes throwing together this marinade and about 10 minutes grilling the chicken. It was splendid. While I’m sure the ribs are worth the labor of love, I’m rather content with my super simple, very flavorful meal of Hawaiian Chicken Sandwiches. You will be, too. Enjoy!



Hawaiian Chicken Sandwiches from So Tasty, So Yummy

2 small cans pineapple rings (8 rings)
2 Tbsp low-sodium soy sauce
2 Tbsp brown sugar
2 tsp dijon mustard
4 (5 oz) boneless skinless breast of chicken
4 whole wheat hamburger buns
4 slices provolone cheese


Combine the juice from the pineapple can, soy sauce, brown sugar and mustard. Marinate the chicken 4 hours or overnight in the the juice mixture. Prepare your grill. Grill the chicken for 15 minutes, flipping once halfway through. Add the cheese with 3 minutes left. While the chicken is grilling, add the pineapple rings halfway through, turning once. Serve on the buns with two pineapple rings each.

Yield: 4 sandwiches

Nutrition Information (per sandwich): 401 calories; 8.8 g. fat; 84 mg. cholesterol; 498 mg. sodium; 39.0 g. carbohydrate; 2.0 g. fiber; 41.5 g. protein; 18.5 g. sugar

Result: A quick and easy meal with lots of flavor and texture. What is it about grilled pineapple rings that make a sandwich so very…summer? So very perfect. This is no ordinary chicken sandwich!

    OH I can taste those ribs NOW!! Our old neighbors used to make such good ribs that he actually won local rib contests. Ok, I want some ribs now ๐Ÿ™‚ Were they as delicious as they sound?! I hope so.

    Love this recipe. I just recently found out that I can actually eat pineapple, I always thought I couldn’t. Thanks for the recipe Nicole, and enjoy your Sunday!

    I love the way you think! We were never the kind to go all-out at parties. I didn’t even celebrate my graduation, other than a family BBQ and store-bought ice cream cake. But man… I just got back from Hawaii, and seeing your chicken sandwiches makes me want to hop on a plane and go there again!!

    I like not knowing my neighbours all that well. I appreciate having a respectable distance between myself and the people that live near me. Except my sister who just moved in right next door. LOL
