I am safe and sound in sunny Houston! I’ve lived in Oklahoma for a YEAR now and this is my first time making it to Texas. Funny thing is, we’re off to Dallas NEXT weekend. 😉
Before I left yesterday I snapped a shot of my bowl-o-oats. I don’t get to eat oats very often because with a 7am start at work and a 35 minute commute…well, you can do the math and see that that’s a fairly early rise (even if you just slip into scrubs!). I typically brew my cup-o-Joe-to-go and scramble off with a piece of fruit and whatever baked good the weekend produced (hence my huge muffin/bread kick lately). But I do miss my oats!
In went:
1/2 cup old-fashioned oats
1 cup fat-free milk
a spoonful of brown sugar
dried cranberries
pepitas
wheat berries
walnuts
Fiber, fruit, omega-3’s, and a breakfast to certain fill me through til lunch. Mmm mmm!
Yesterday we went outlet mall shopping and I just may have purchased the above… 😉 Oops! We went out for Mexican food after shoppin’ til we dropped. I got a tamale, a chicken taco, 2 chicken enchiladas, and rice and beans. We left with more than we ate! Huge portions!!!
Today we’re off to Gaveston and to get some sun! Ta-ta from Houston! 😀

Have a fun time in Houston! This is where my husband grew up and we’ll be moving there in a couple years when I finish my fellowship. The Med Center is amazing!
And Galveston is so neat too… Don’t forget to have Salt Water Taffy at LaKing’s Confectionery! They are the best!
