…to make the things we love!
It only took one bite of farro to create a serious love connection. So why have I not made farro since March? GOOD QUESTION! Probably the same reason I hadn’t made pesto until this week…no good reason at all!
I once again made the Greek Farro Salad I love, but instead of purchasing bell peppers, I substituted in a TON of home grown cherry and heirloom tomatoes from my garden…
Greek Farro Salad adapted from The Food Network
1 1/2 cups farro (dry), cooked
1 cucumber, unpeeled, seeded, and diced
1 red bell pepper, large-diced
1 yellow bell pepper, large-diced
1 pint cherry or grape tomatoes, halved
1/2 red onion, sliced in half-rounds
1/2 pound 6 ounces feta cheese, 1/2-inch diced (not crumbled)
1/2 cup kalamata olives, pitted and halved
For the vinaigrette:
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 cup red wine vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup 1/3 cup olive oil
Directions:
Place the cooked farro, cucumber, peppers, tomatoes and red onion in a large bowl.
For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion. Pour the vinaigrette over the vegetables. Add the feta and olives and toss lightly. Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature. Serves 12 (3/4 cup per serving)
Nutrition Information (per serving): 243 calories; 15.4 g. fat; 505 mg. sodium; 20.9 g. carbohydrate; 2.4 g. fiber; 6.5 g. protein
Result: Just as amazing as I recall 🙂

I wanted to give a quick update accountability check on my 101 Days of Summer Challenge with Biz. My goal was to run 70 out of 101 days…at least 1 mile!
30 days in….hmmmm.
I have run 16 out of 30 days which is less than 4x a week. Ooops. I am not going to meet my goal at this rate….gotta step it up! I have, however, run an average mileage of 2.93 per run with only ONE run being 1 mile (+ a hockey game). If you remove the loner 1-miler, my average run is 3.06 miles. I exercised a total of 20 times, however — 15 runs, 1 run + hockey, and 4 days of 1-2 hockey games each. I just can’t seem to push through 2 games of hockey and THEN run. My longest run has been 5 miles this month.
Bring it on, July!

This farro salad would be a good one to serve at work!! I have to see if we can get farro through our distributor..sometimes they don’t have everything we want/need at the time.
p.s. The homemade granola bars stick together VERY well, which is nice, because it is a small amount of honey/brown sugar..but trust me..they work! ๐

Those tomatoes look so so good. I wish my balcony got enough light to grow tomatoes. Yum. Oh, and I love it when dogs do that fish leg thing. It’s hysterical!
I love wheatberries! And I have some right now and don’t know what to do with them…. have any recipes?? I usually eat them at Earth Fare where they are already prepared in a yummy little salad…

Happy ALMOST birthday! So exciting. And, I can’t believe we are already half way to 2011. That’s crazy. I don’t like thinking about that. The years go by too fast!

My favorite exercise is doing various weight-training. It’s really ’cause I’m lazy and don’t like cardio that much. ๐ Although I’m beginning to like biking more and more!
My favorite grain… argh. Probably whole barley. There are tons that I’ve yet to try though. Next up is amaranth and millet (I’ve technically had millet before but it was in a TJ’s multigrain pilaf so I don’t think that counts haha). ๐

Hmmm….favorite exercise – I can’t choose, it’s a tie between spin and yoga right now. Two totally different things….but I really look forward to them both so much.
I cannot believe we are already halfway through the year. What makes it even more crazy for me is only a couple short weeks after the New Year I will likely have a baby in my arms. Wow! Perspective right there.
As for my goals, I’m doing great. My goals were to trust God we would conceive our 2nd child, which of course happened. And also to just really enjoy life and focusing on health, which has been going great too.
You can totally make your goal! Totally!
My fav form of exercise is running (obviously), but I do have to say- I’m starting to really like the elliptical now and we used to be mortal enemies!

The salad with fresh home grown tomato is the best!
Right now I just enjoy walking in the morning but the hard exercise that give me sweat is always running around with my baby.
My favorite exercise is walking, and my favorite grain is quinoa, tho I believe technically it is not a grain. I love the texture ! Farro is also great- and if you enjoy it you would also enjoy wheat berries and rye berries, Same shape and same whole kernel thing, but both have different tastes. I like to mix whole wheat berries with steel cut oats and millet or brown rice in the crockpot for a multigrain hot cereal for winter mornings
Awww super cuteness :). I love apelt and oat groats mixed together. Need to try farro! I love running and it’s my form of stress relief but since it’s been a stressor lately with my Achilles pain i’ve been loving the variety from p90x as of late.

I don’t know how I’m doing on my NY’s resolutions (I kinda forgot what they were), but I’m scared to look, haha! ๐ I do know that now that I’m pregnant all I really care about is having a healthy baby in December and doing my part to make sure that happens.
