In your arsenal, you should keep…

Anyone who spends time in the kitchen has a fairly set arsenal of grocery items. For me, one of those food items is whole wheat pastry flour. I find this flour in the bulk bins at Whole Foods for approximately $1.60-$1.70/pound. Unlike whole wheat flour, whole wheat pastry flour is ground from soft wheat, making it the ideal “whole grain” flour for baking. The difference between whole wheat and whole wheat pastry flour are profound, so if you’re looking to add something to your arsenal…I recommend whole wheat pastry flour.

On that note… 🙂

Vegan Zucchini Bread Muffins from Weekly Bite

3 cups whole wheat pastry flour
1 tsp kosher salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 cup sugar
3/4 cup canola oil
1 cup unsweetened applesauce
2 tablespoons vanilla
2 cups grated zucchini

Line muffin tin. Preheat oven to 325º F.

Combine flour, salt, baking soda, baking powder, and cinnamon. Set aside.

Mix sugar, canola oil, vanilla, and applesauce until mixed through. Add dry mixture to wet mixture. Mix until combined. Fold in zucchini.

Using an ice cream scooper, drop batter into muffin cups. Muffin cups should be about 3/4 full. Bake for 24 minutes or until tooth pick come out clean. Remove from oven and place muffin tin on cooling rack. Yield: 18 muffins

Result: Estela and I are on the same page when it comes to vegan baked goods — they’re so good! I will take the healthy fat, higher calorie muffins any day…they are so satisfying! I’ve been wanting to make zucchini muffins since I had them in Dallas while visiting our friends Jeff and Liz. They’re delicious…and you can’t beat getting in some veggies at breakfast in the form to baked goods 😉

I hope everyone had a wonderful weekend! I’m thinking YES as NO ONE was around the blogosphere!! 😀

This is my last week of work – sad! But I am very much so looking forward the following week — a week of nothingness!! I did make yogurt in my CROCK POT (!!) over the weekend, and there will be a full report on that tomorrow! And Mr. Prevention is home this week, so I’ve got a full line-up of new recipes to try! Keep an eye out! 😉

A quick Lily picture — she’s so playful with Mr. Prevention home. His working in Ohio during the weeks has been hard on us both!

And speaking of Mr. Prevention…would you believe me if I told you he LOST 1 1/2 pounds last week? You know, after that entire LARGE Little Caesar’s pepperoni pizza and Buffalo Wild Wings and beer the following night. I pouted all of yesterday. Life just isn’t fair!

Question: I can probably safely assume you love food if you’re visiting my blog — but do you like to grocery shop??

Have a great week!

I HATE grocery shopping and have to go today ๐Ÿ™ I think the reason I hate it so much is due to the amount of money I spend there every week. I have two teenage boys so you can just imagine how much they eat!

  2. July 12, 2010 / 5:36 am

I love grocery shopping! My poor husband was along with me yesterday while I was at Trader Joe’s. The poor guy! He was very patient, but he doesn’t get how fun it is for me to find new things ๐Ÿ™‚

I love Lily pictures. She is just so cute!

  3. July 12, 2010 / 5:43 am

I LOVE to grocery shop!! I hate when my husband goes with me because I enjoy it and like to take my time.

  4. July 12, 2010 / 6:46 am

If I have the time, I really enjoy grocery shopping. I usually wander down every aisle. Buying is not the issue, it’s what to do with it once you’re home?? ๐Ÿ˜‰

  5. July 12, 2010 / 6:51 am

Love whole wheat pastry flour. It’s such a healthy swap for white flour. I use it all the time in recipes, typically replacing at least 1/2 of the white flour called for. Those muffins look like a hit!

  6. July 12, 2010 / 6:52 am

Those muffins look so so good. I could use one this morning, really.

Your situation reminds me of that commercial where the cartoon woman and cartoon man go on a diet together. She says, “He lost 7 pounds. Me? My boobs shrunk.” I agree: It’s not fair how a man can do less than a woman and drop weight so much easier!

However, if you two would like to supplement your income, he should promote the Little Caesar’s diet. ๐Ÿ™‚

  7. July 12, 2010 / 6:52 am

Most of the time I hate grocery shopping. As a result I do most of it online. I gather that this service is often not available or costs a lot of money in the USA.
If I buy basic food/cleaning products/cat food for a month the amount I spend gets me free delivery.
Also, I have a weekly box delivery of fresh organic fruit and veg, and I usually plan my meals around that.
I rather like the challenge of finding something to cook with what I have got.
I will probably try your zucchini muffins!

  8. July 12, 2010 / 7:14 am

Yummy muffins ! I LOVE grocery shopping, and it is even better f in my favorite store. I love reading the labels, comparing prices , and I drag my husband and son with me. Makes for a lot of interesting discusions and there are no fights about how much we are spending

  9. July 12, 2010 / 7:22 am

I should try whole wheat pastry flour! I’ve made things with regular ww flour, but yeah, that stuff is DENSE! I don’t mind it, but my husband isn’t crazy about it.

You are absolutely right – ww pastry flour is a must.

  11. July 12, 2010 / 7:30 am

I love grocery shopping! I probably spend way more time in the store than I should- and it would explain my issue with constantly buying way too much at Trader Joe’s!

  12. July 12, 2010 / 7:43 am

My bf recently started going to the gym again and has lost a ton of weight! You’re right, its seriously not fair that guys can lose so quickly! =)

  13. July 12, 2010 / 7:55 am

I LOVE to go grocery shopping ! This may change though, once I start working in a grocery store…hehe, we’ll see.

I love that you made yogurt in a crock pot, I’ll have to find time to stop by and see that tomorrow. I have a yogurt maker (I think I’ve told you this) and I need some tips!

PAstry flour is something Ihave NEVER worked with. Crazy, right? Perhaps I should. I love high fat rather than high sugar too. Any day. Love it.

  14. July 12, 2010 / 8:08 am

I used to despise grocery shopping; however, since I’ve started eating healthier and trying new recipes, mostly found on food blogs, I find myself excited (at times, not always!) to go to the grocery store and buy fresh new produce, or a new product!! I bought pearled barley the other day for the first time and was so excited about it…who would have thought I’d be excited about barley:).

  15. July 12, 2010 / 8:16 am

The muffins look great – I have never used WW Pastry Flour. I don’t bake a lot though, so I’m not sure it’s worth buying.

I LOVE the grocery store – especially fun markets like Whole Foods and (near me) Plum Market. I could spend hours browsing the aisles ๐Ÿ™‚

  16. July 12, 2010 / 8:22 am

My pugs have the same donut toy! I don’t mind grocery shopping if I’m organized…..

  17. July 12, 2010 / 8:31 am

I love grocery shopping, just not at Market Basket, which always is a zoo and you get hit by shopping carts

  18. July 12, 2010 / 8:40 am

I was going to make zucchini muffins today too!! Of course using whole wheat pastry flour! It really is handy to have around and makes healthier baked goods that are light and delicious!

  19. July 12, 2010 / 10:31 am

I DO like to grocery shop… I enjoy grocery shopping even more if I just go by myself. I can take the time to look at all the produce and all the labels of everything else in the store. I can look around to try new things and just have a leisurely grocery shopping experience. Sounds goofy, but it’s true!

  20. July 12, 2010 / 11:21 am

Wow the muffins looks so healthy and delicious!
I love grocery shopping…probably love more than shopping for clothes ๐Ÿ™‚

  21. July 12, 2010 / 11:34 am

Wish that I could lose weight like Mr. Prevention…

I like shopping; it’s the like of cooking that’s been harder to develop…

  22. July 12, 2010 / 11:37 am

I have never made anything with WWPF! It has always intrigued me. Those muffins look AMAZING! And I’m with you – I’d much rather have the higher fat/cal muffin that will satisfy me over the one that I’ll need to eat about 10 of to feel full. ๐Ÿ™‚

I LOVE to grocery shop. Well, usually. At the end of a long work day (or week) or when it’s crowded, it’s not quite as fun. But I love going in with my little list and feeling like I actually accomplished something!

  23. July 12, 2010 / 12:50 pm

I LOVE to grocery shop! It’s always better when I have a plan/list. Knowing what I plan to cook for the week makes it a more successful trip.

  24. July 12, 2010 / 12:58 pm

I actually love to grocery shop, but hate to cook. I could spend hours in there walking up and down the aisle, but I just do not enjoy standing in the kitchen cooking. Maybe one day I’ll change and grow to love it! I’m hoping!!

  25. July 12, 2010 / 1:03 pm

I’m so glad you tried the muffin recipe!!! Yay!

Vegan baked goods are the best ๐Ÿ™‚

I happen to love grocery shopping! But… I like to go to nice grocery stores… it enhances my shopping experience ๐Ÿ˜‰

  26. July 12, 2010 / 1:41 pm

I hate all forms of shopping, even grocery shopping, but not as much. I love whole wheat pastry flour I use it for everything, it actually makes light whole wheat baked goods, not hockey pucks ๐Ÿ˜›
Thank you for your yogurt post the other day I was on the fence about getting a yogurt maker and you pushed me over and I’m soooo glad I got it. I calculated how much money I could save and was ecstatic and it tasted awesome!

      July 12, 2010 / 1:45 pm

That’s awesome! I am posting about it tomorrow, but the yogurt maker is definitely better than the crock pot route. I can’t wait to get one!

  27. July 12, 2010 / 1:50 pm

Love to grocery shop, I think it is fun to meal plan and wander up and down the aisles.

  28. July 12, 2010 / 2:17 pm

Grocery shopping on Saturdays is the best part of my week! I LOVE it! Well, as long as my boyfriend doesnt come. It always turns into a fight since I refuse to get a buggy when I know full well I can fit everything into a basket. He carries it and then complains about the weight but WONT give it back to me!
He just doesnt come with me anymore.

  29. July 12, 2010 / 2:45 pm

Normally, I LOVE to grocery shop….I have to go today and for some reason I am not looking forward to it! I’m going to have to check out the flour…thanks for the tip!

  30. July 12, 2010 / 3:20 pm

Men! Don’t get me started. My husband lost 10 lbs since April without even trying!! Ugh.

I looooooooooooove grocery shopping. Love it! I treat it like a sport, lol. I could spend all day in one store just browsing labels and walking around in circles.

  31. July 12, 2010 / 3:40 pm

I feel like I need to be in the mood to grocery shop. I don’t always enjoy it! haha!

  32. July 12, 2010 / 4:18 pm

I visit your blog for cute pictures of your dog. Oh yeah, and your wise advice and suggestions.

I like grocery shopping! It makes me excited! However, as much as I love food and eating, I still wish I could spend all that money on tangible items like shoes!!

  33. July 12, 2010 / 4:22 pm

OH MY WOW! i would LOVE to eat one of those (or two of those) mm with some jam or butter ontop..or even nut butter! <3

  34. July 12, 2010 / 4:35 pm

I’m going to have to check out whole wheat pastry flour, I’ve never worked with it. The muffins are gorgeous, they’re perfect for breakfasts on the go!

  35. July 12, 2010 / 4:41 pm

Thanks so much for clarifying the difference between ww flour and ww pastry flour! I didn’t know they were so different but had been wondering!

Now that I’ve been cooking more the last few months I do love to grocery shop – especially at the farmers markets! I look at it as an adventure, to see what new things I can find and come up with to try. Like the avocado zuchinni I found last time that we’re trying tonight! I probably spend too much time shopping, but that’s easy to do here.

  36. July 12, 2010 / 6:06 pm

I loooove grocery shopping! ๐Ÿ™‚ Do you have any advice for eating healthy in a college dining hall?? Any advice would be great.. I DO NOT want to gain the freshman 15, Lol!

  37. July 12, 2010 / 7:29 pm

I’ll enjoy grocery shopping more once I get close to goal weight and slowly add in some foods I’ve been avoiding. It’s not fair guys can eat like that and still lose!

  38. July 12, 2010 / 10:40 pm

hah yay for your hubby! whoo!!
i LOVE GROCERY SHOPPING! its like therapy to me!! hehe ๐Ÿ™‚

  39. July 13, 2010 / 8:04 am

I’ve never used whole wheat pastry flour, but I should definitely add it to my stash of flours! ๐Ÿ™‚

  40. July 13, 2010 / 10:17 am

Good to know I can get WW pastry flour at WF. Unfortunately there isn’t one in my immediate area but next time I’m around one, I’ll have to remember that! I only recently bought WWPF for the first time, and I could only find it in ONE grocery store, in a small bag for a hefty price ๐Ÿ™

  41. July 13, 2010 / 5:11 pm

We will have to make these muffins! I have never had zucchini bread or muffins, so I am curious about them. I have also never heard the idea of using an ice cream scoop to put batter in to muffins liners. Funny!
