We tried the breakfast cookies this week without the coconut. My daughters have been enjoying them and I've been having one each morning reheated in the toaster oven along with my morning smoothie. They are great! Thanks!

[…] 2) In January of this year my daughters and I embarked on a quest to find new school lunch ideas. Over approximately 11 weeks each of them selected one or two new things to try for lunch each week. The little project was successful and resulted in some additional items we could choose from when packing lunches. After the project got underway my younger daughter was more engaged in the process and recently asked to resume cooking one or two things each week for her to have for breakfast or lunch. In addition, in May my older daughter was diagnosed with a gluten and dairy sensitivity which requires I branch out to find her additional options as well. So, next week we are trying: Coconut-Oat Cranberry Breakfast Cookies (GF). Hi Terri, I just whipped open a copy to be sure there wasn't an error, as you are correct, teff is gluten-free. All of my copies have teff listed as gluten-free, so hopefully you just read wrong? Please feel free to email me if you have any additional questions/concerns. Thank you for your comment. -Nicole

Why do you list teff as "not gluten free" in your book? Teff is a gluten free grain that is used in a lot of gluten free cooking and baking. I have celiac disease and I've been using Teff for over two years now. You need to research your information better!
