Last night, I tried a recipe that blogger Joanne of Eats Well with Others RAVED about!

Cheesy Zucchini, Red Pepper, and Barley Bake adapted from Joanne
Serves 6

2/3 cup barley
1 1/2 cups water
1/4 tsp garlic salt
2 medium zucchini
3 red bell peppers
1 red chili pepper
2 tbsp olive oil
1 tsp oregano
1 tsp basil
1 egg
1 lb 15 ounces part-skim ricotta
1/4 1 cup reduced fat cheddar cheese

Cook the barley according to directions.

Preheat the oven to 350. Wash the zucchini and cut it into thick slices. Cut these in half. Wash the peppers, core them, and cut them into small dice. Mince Dice the chili pepper.

Mix the ricotta with the egg. Heat the olive oil over medium heat. Saute the zucchini and peppers (red and chili) until soft. Add garlic salt along the way. Add the basil, oregano, and black pepper.

Mix together the barley, zucchini/pepper mix, and ricotta/egg mix. Spread into an 9×13 pan. Sprinkle with the cheddar cheese. Bake for 40-50 minutes or until the egg is set and cheese has melted. Let stand for 5 minutes. Cut and eat.

Nutrition Information (per serving): 255 calories; 13.3 g. fat; 73 mg. cholesterol; 387 mg. sodium; 22.5 g. carbohydrate; 4.2 g.fiber; 16.7 g. protein

This recipe was wonderful — we will definitely be making this again! A great vegetarian entree OR side dish. And the portion size is plentiful!

On a completely unrelated note, yesterday was one of my most rewarding days yet as a dietitian. Two patients who I’ve been working VERY closely with to lower their blood sugars both had MASSIVE drops in their HbA1C’s (average blood sugars over 4-6 weeks). It was so exciting to see them feel empowered with their diet and lifestyle changes! 😀

    Congrats on your patients’ successes! Having days like that makes being a RD totally worth it! You are so lucky you are off on Monday; I actually have to work through the weekend at the hospital and do not have a day off until Friday!

    I love the idea of this barley bake. More fun than the traditional lasagna or ziti (though of course they have their place too!)

    I love trying out new vegetarian recipes… That one sounds mighty yummy! That’s so exciting about your two clients. I’m sure that kind of stuff makes your job even more worth it when you can see those kind of results. I’m on the way up to Seattle to spend time with family and go snow shoeing tomorrow… Can’t wait!

    That dish sounds amazing! Well, for my lunches, no one else in my family would touch that with a 10-foot pole!

    I am lucky to have Monday off – just because I am taking the day off! My daughter is off of school and only has to work until 11:00 – so its sushi lunch and thrift stores for us on Monday – can’t wait!

    This meal looks fantastic. And, the barley is wheat free, yeah! I haven’t tried cooking with barley yet, and I’m not sure why. I’m really into quinoa right now so I figure nothing is better. I have to branch out, and I will of course.

    I think my boss is giving me Monday off, but I’ not 100% sure I will actually take it off. I’m sort of behind, so maybe I’ll take a half day. I love to work, is that nerdy?? haha, maybe I’ll just watch the Olympics for half the day!
