Luck of the Irish!

If you know my last name, you know I’m very IRISH! [More so by marriage than by blood…but regardless, Irish!]. Green beer this evening will ensue. Guaranteed. 😉

With a warm front (ahhh…60’s) hitting Tulsa, stew seemed… not quite right. But there’s ALWAYS room for whole grain carbs in this Irish heart (and tummy)!

I am submitting this Brown Soda Bread recipe to the Regional Recipes: Ireland hosted by Joanne!

Brown Soda Bread from Cooking Light

Cooking spray
2 1/2 cups whole wheat flour
1/2 cup all-purpose flour
1/2 cup steel-cut oats
2 Tbsp brown sugar
1 Tbsp wheat germ
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups low-fat buttermilk
1 large egg, lightly beaten


Preheat oven to 325º F.

Coat a 9 x 5-inch loaf pan with cooking spray. Line the pan with parchment paper, and coat with cooking spray.

Lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 6 ingredients (through salt). Combine buttermilk and egg; add to flour mixture. Stir until just combined.

Spoon mixture into prepared pan. Bake at 325º F for 1 hour and 5 minutes or until a wooden toothpick inserted in center comes out clean. Invert brad onto a wire rack; cool completely. Remove parchment; slice bread into 12 slices. Yield: 12 servings.

Nutrition Information (per slice): 160 calories; 1.8 g. fat; 7.2 g. protein; 30.8 g. carbohydrate; 4 g. fiber; 18 mg. cholesterol; 1.7 mg. iron; 286 mg. sodium

    Looks like the leprechauns set to work on your garden to make it green for St. Paddy’s Day! Can’t wait to see all the veggies when they are full grown. It looks VERY promising.

    I’ve never had brown bread! This is something that needs to be changed because yours looks delicious.

    I have such fond memories of my mom’s Irish Soda Bread. I would try making hers, but I’m afraid nothing could be as good as what I remember.

    The pics of your garden make me so excited. I have to get started on mine. As soon as I got to your pictures I decided to devote this weekend to working on my edible garden, but then realized I’ll be gone… luckily I have a few days off the following week. Must get things planted so I can have that same feeling of delight of things growing!

    Happy St. Patty’s day! My roommate made some Irish soda bread yesterday and added some raisins to it…so delicious! And I had a green smoothie this morning! I definitely felt that it started my St. Patty’s day off right.

    I saw that recipe on the CL website it looked good! my roomate made irish soda bread yesterdy and it said “for best results let it sit overnight in aluminum foil’ sooo I have to wait till today to try it!!

    I had a salad for lunch, if that counts, its green πŸ™‚

    Your garden is going to be SO awesome!! Im totally jealous of it.

    Im wearing green today totally by accident. My plans for tonight dont involve green beer, but they DO involve booze! lol Im bottling wine with my mom and my grandma. Its actually their wine, but theyre going to pay me with a couple of bottles so Im all for it!

    I wore a green sweater/cropped shirt deal today over a brown tank. It was olivey green so not obnoxious or anything! I got told I looked too professional during my lunch shift serving job. Ha, whatever.. not at all. I also had a big Chipotle salad so a lot of green there.

    I’m so excited about your garden!! I’ll have to get some tips from you because Nick and I plan to start gardening the second we move into our new house. I want to plant some kale and spinach, first. I am sick of buying organic spinach (because it’s on the dirty list) and paying 6 dollars each time, what a rip off! I guess it’s sort of worth it though….

    I didn’t wear green or eating anything green (other than spinach) yesterday. I did have a green…labeled..beer! It was a Sierra Nevada and it was deeeelicious.
