Meatless Monday: Vegan Banana Oat Breakfast Cookies


I don’t always go grocery shopping with Mr. Prevention, but when I do it’s sure to be more fun…and more expensive.

We headed to CostCo yesterday afternoon and the location near our home is always INSANE. Like…can’t-hardly-find-a-parking-spot insane. Mr. Prevention think he’s really funny and in very congested areas with a lot of people he’ll make “moo-ing” sounds because, well… shoppers with their carts probably do look like cattle being herded through the store. I have no idea why, but this makes me laugh every time.

{I fully realize this is probably one of those things that’s only funny if you’re there.}


CostCo is always a lengthy adventure because it’s important to compare prices — not everything is a good deal. My favorite CostCo buys are: vanilla extract (Kirkland brand), bell peppers, onions, chicken breasts, Fage 0% plain yogurt, berries, spinach, pineapple, honey, maple syrup, most spices, and chicken stock. I’m sure there’s others, but those are my go-to items.

Greek yogurt has been my staple breakfast for the past few weeks. I have been packing for breakfast 1 cup of 0% plain Greek yogurt with 1 cup of diced strawberries, drizzled with about 1 1/2 tablespoons of honey. For about 300 calories, I find this to be healthy, filling, and really good. This week I’m changing it up and swapping in blackberries.

But then 10:30am rolls around and I’m hungry. Lunch seems forever away…and a lot of times, what I want is something sweet. Suddenly, the sweets in the break room are all but calling my name.


This week, I’m determined to have a care-free (normal schedule!), well-planned (meal planned, well-stocked fridge, and workouts planned for Tues, Wed, Thurs, Sat, Sun), low-stress work week that has a lot of structure. My life has been lacking structure and knowing that the late morning hours can bring about a healthy, delicious breakfast cookie snack makes me very happy….and dreading the work week just a little less.

These are great for breakfast, snack, or dessert. Kids have got to love them if my husband does! These are whole-grain, refined sugar-free, and vegan. I made these yesterday morning in about 15 minutes.

Other than my CostCo event with my moo-ing husband, and perhaps my hockey scrimmage, making cookies was my best spent time this weekend 😉



Vegan Banana Oat Breakfast Cookies from Eat Drink Love

1 1/2 medium bananas (1/2 cup), mashed
1/2 cup creamy natural peanut butter
1/4 cup maple syrup
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1 cup old fashioned oats
3/4 cup whole wheat pastry flour
1 1/2 tsp cinnamon
1/2 tsp baking soda
pinch of salt
1/3 cup dried cranberries


Preheat oven to 350 F.

In a small bowl, combine the banana, peanut butter, syrup, applesauce, and the vanilla extract.

In a separate bowl, combine the flour, oats, cinnamon, salt, and baking soda. Stir the dry mixture into the wet mixture until well-combined. Stir in the cranberries.

Prepare a large baking sheet with parchment paper. Drop the dough onto the pan using a 1/4 cup measure. Wet a spatula and flatten down the mounds of dough so they are about 1/2 inch thick.

Bake for 15 minutes or until browned.

Yield: 14 large cookies.

Nutrition Information (per cookie): 134 calories; 5.3 g. fat; 0 mg. cholesterol; 90 mg. sodium; 19.6 g. carbohydrate; 2.4 g. fiber; 3.1 g. protein

Result: Thumbs up! These are peanut butter oatmeal cookies that are soft with tart cranberries throughout. Simple to make and plenty sweet. Wholesome, nutritious ingredients…and vegan. Mr. Prevention approved these, even. Enjoy!


 I shouldn’t have stayed up so late watching playoff hockey…love this time of year.

    I need to make a run to costco soon. I agree, can’t beat the vanilla extract and I also like to buy the pepper grinder as well…the price is perfect! Other costco staples for me are napkins, kitchen garbage bags, chicken stock boxes, pork tenderloin, ground turkey, tzatziki and any of the produce that looks good in the “cold” room. I also LOVE their roasted garlic bread…but um…try to resist.

    cookies for breakfast? what’s not to love? lol

    I always try to stick to a few specific things at costco but always end up spending too much since I always end up grabbing a couple extra things.

    These look delish! My husband drives me CRAZY when he goes to Costco .. He always loses the receipt in between checking out and getting to the door even though I have told him a bazillion times to hold on to it … lol! But yes, trips there are way more expensive with him ๐Ÿ™‚ Not that I am complaining!

    As soon as I read the title of your post, I got excited and had to skip down to the recipe before I read the post (my hubby also does weird things at the grocery store–I totally understand that you’d have to be there to get it! lol) to see if these were the same breakfast cookies I make. They are so close, I had to track down the original recipe and found out YES yours came from the same recipe I know and love. I know it’s weird, but I get excited when I find out other people make and love the same recipes I do. LOL! I’ve never posted it, but I so need to. They are so good! The original recipe is healthy, but yours is a little better b/c less fat and less sugar. Great photos!

    It’s a mixed blessing to shop with my husband. On the one hand, he takes care of the baby. On the other, we end up with so much more junkfood, alcohol, and a large grocery bill!

    Taking my fiance grocery shopping is like going with a five year old…….hilarious at times, but things get thrown into the cart and we end up spending twice as much. He gets impatient while I look at all the labels too and he’s almost sure to lose me a few times…..to which I hear my name being called several aisles away………but he makes me smile! I am making these cookies ASAP…….I need a good in-between meal snack.

    Shopping with Jesse is ALWAYS more expensive. I sometimes make recipes that call for expensive ingredients, and I spend the money on them, but in the back of my mind I’m always thinking about the cost. Now, here in China, most of my normal “staples” are crazy ridiculous expensive at the import stores, so I try to carefully chose which things to buy. Jesse seriously doesn’t care. He throws caution to the wind and just loads the cart up. The only thing that slows him down is worrying about how many and how heavy the bags will be when we stand outside waiting for a taxi!

    These sound like a great grab and go breakfast! (And probably way healthier than the oatmeal raisenette cookies I made yesterday and am pretending are a good breakfast substitute!) Now I just need to find whole wheat pastry flour…

    I think a double recipe of these are on the to-do’s for tomorrow. Quick healthy snacks that aren’t too heavy on the sugar are exactly what I need right now ๐Ÿ˜€

      Yummy! I like these – they’re filling and satisfying but they still taste good.. I think I’m going to try a different flavor variation because I like the base recipe so much ๐Ÿ™‚ They do dry out and get denser fairly fast though(or maybe that’s just the dried fruit I used… or maybe because I used a different rolled grain… I can’t follow a recipe 100%, haha) Next time I think I’ll freeze them right away and then take them out as I need them. Thanks for sharing!

    Excellent! I’m not vegan, but try to eat right and these fit the bill with whole grains, low sugar, and healthier fat.
