Not bitter sweet…

Mooonday mooorning…blaaah.

But the next time you have a second in the morning for a divine breakfast, I recommend you try yesterday’s breakfast for something new and delicious! You can read all about it and see its glamor shot here.

And here is yet another recipe I can blame John for. 😉 Until several months ago, I’d never cooked with Arborio rice. Now, it’s regularly on the menu and is a huge Mr. Prevention pleaser!

Pan-Seared Shrimp and Arugula Risotto from Cooking Light May 2010

4  cups chicken stock
2  tablespoons  extra-virgin olive oil, divided
1  pound  large shrimp, peeled and deveined
1/2  teaspoon  salt, divided
1/4  teaspoon  freshly ground black pepper, divided
1/2  cup  chopped shallots
6  garlic cloves, minced
1  cup  uncooked Carnaroli or Arborio rice or other medium-grain rice
1/2  cup  dry white wine (Chardonnay)
1/2  cup  (2 ounces) grated fresh Parmigiano-Reggiano cheese
2  tablespoons  butter
3  cups  baby arugula
1/2  cup  thinly sliced fresh basil

Directions:

Bring chicken stock to a simmer in a small saucepan (do not boil). Keep warm over low heat.

Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Sprinkle shrimp with 1/4 teaspoon salt and 1/8 teaspoon pepper. Add shrimp to pan; cook 1 minute. Remove pan from heat; set aside.

Heat remaining 1 tablespoon oil in a large saucepan over medium heat. Add shallots and garlic to pan; cook 5 minutes or until tender, stirring frequently. Add rice; cook 1 minute, stirring constantly. Stir in wine; cook 1 minute or until the liquid is nearly absorbed, stirring constantly. Add 1 cup stock; cook 4 minutes or until liquid is nearly absorbed, stirring constantly. Stir in remaining stock, 1/2 cup at a time, stirring frequently until each portion of stock is absorbed before adding the next (about 25 minutes total). Stir in shrimp; cook 1 minute or until done. Stir in cheese, butter, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon pepper. Remove from heat; stir in arugula and basil. Yield: 6 servings; 1 cup each.

Nutrition Information (per cup): 344 calories; 13.4 g. fat (sat 4.8g, mono 5.8g, poly 1.5g); 139 mg. cholesterol; 521 mg. sodium; 30.3 g. carbohydrate; 1.9 g. fiber; 26 g. protein

Result: This was really good…except wilted arugula gets very bitter. I think I would substitute in asparagus or spinach instead.

    I had a weekend full of good eats, especially after attending a cooking class on Friday night. I am going to go with Shrimp Ceviche as my favorite thing I ate this weekend!

    The best thing I ate this weekend was shrimp diavalo, which was wonderful too, but the best part…under 500 calories!!!

    That looks so good and creamy! The best thing I ate were buffalo wings. I went to a friend’s wedding in Buffalo and couldn’t miss the original buffalo wing!

    Risotto looks delicious, i have never tried with prawns so far but looks very good…last weekend i ate chicken tikka & veg pilaf..

    Arborio rice is great. I love how it gets so creamy. I don’t use it as often as brown rice because I can’t just leave it on the stove and let it cook for 45 minutes while I do other things. But when I’m feeling a need for a change, I love using it and making it really creamy. Those shrimp look yummy!

    That looks like a great recipe!!! I think the best thing I ate all weekend was a turkey panini with brie, caramelized onions, and mango chutney. It was delicious, and not just b/c it was my post-10-mile race meal! ๐Ÿ™‚

    I was just wondering out loud (with my aunt) about the possibility of having outgrown my shrimp allergy since I haven’t had any in so long. Wishful thinking, I’m sure.

    I made the spring vegetable risotto last night from that same CL issue! Except I reduced the amount of Parmesan cheese to 1 ounce – I had really good Parm so a little went a long way – so creamy good though!

    Oh, and I added green apple to mine – loved the combination of flavors!

    Best meal this weekend was definitely Saturday morning breakfast: egg white spinach omelet filled with cream cheese and avocado, fruit salad and freshly baked whole wheat olive oil bread. It was heavenly ๐Ÿ™‚

    I’ve been seeing a lot of shrimp lately, and I think it’s a sign that I need to make some! ๐Ÿ˜‰ I’m looking forward to the info on canola oil, since that and olive oil (depending on what I’m making) are my go-to oils.

    Best thing I ate – pineapple. My grandma brought a fruit platter with chocolate dip to parents house for a snack during the hockey game. It was the best pineapple Ive ever tasted. I may have stolen the leftovers and taken them home! ๐Ÿ™‚

    I have never, ever had risotto before can you believe that? Either way that dish looks amazing! Your husband is one lucky man. I NEVER cook for my boyfriend (unless he buys the groceries). He brings his own dinner when he comes to my house because I just dont have it in me to cook for two people. lol Im awful I know!

    Wow, I am just in awe of your site, such delicious recipes and B-E-A UUUUtiful pictures.
    Now I am absolutly love shrimp, so my mouth started watering as soon i saw the picture, but i was just wondering could I make it without the dry white wine, would it still taste awesome
