Only losers don't love breakfast!

Losers, like my husband.

His lack-luster opinion and participation in breakfast is a pet peeve of mine. It’s right up there with ohhh…leaving hangers scattered throughout clothes so that when you want to hang clean laundry, you first must go on a hanger hunt. *grrr*!!

But in all seriousness, I love breakfast and weekends allow time for creative, fun, and delicious breakfasts! Alone. Husband doesn’t join in. Loser.

Husband is out of town this weekend so there was no raining on my breakfast parade. I decided to try the crepe recipe Jess posted and they turned out great! Nom nom nom!

Saturday morning:

Filling: low-fat ricotta cheese mixed with Cool Whip
Topping: sugar-sauteed blueberries (in a pan over medium heat sautee berries with 1 tsp sugar, until juices being to ooze from the berries)

Sunday morning:

Filling: low-fat ricotta cheese mixed with Cool Whip
Topping: Lower-sugar chocolate syrup and a sprinkling of powdered sugar

Crepes adapted from How Sweet It Is
makes 12-14 crepes 8-10 crepes

1 1/2 cups flour 1 cup whole wheat pastry flour and 1/2 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 cup milk
2 tablespoons melted butter Smart Balance Light
2 eggs

Sift dry ingredients together. Mis wet ingredients (except melted butter), making sure eggs are beat throroughly. Add wet ingredients to dry, and stir until all lumps are gone. Stir in melted butter.

Heat a skillet on medium heat. Use an oil spray to coat the pan. Add batter with a 1/4 cup measuring cup to the hot skillet. Swirl pan to spread batter. Let cook for about 30-60 seconds.

Remove and store in between wax paper while cooking the remaining crepes.

Warning: the first crepe can go to the dog…doesn’t turn out well at all!

  2. February 7, 2010 / 1:38 pm

What a great looking breakfast! I wish I was a big breakfast person… I might make this for dinner ๐Ÿ™‚

  3. February 7, 2010 / 1:44 pm

I don’t really care about the Super Bowl but it is always more exciting when the underdog wins so if I was rooting for anyone, it would be the Saints for sure. Especially because they are from New Orleans!

I lol’d at the “hanger hunt”! Doesn’t everyone know that immediately upon the clothing being removed from the hanger, the hanger must be re-hung along side the other empty hangers?? C’mon Mr. Prevention RD, get with the program! ๐Ÿ™‚

  4. February 7, 2010 / 1:59 pm

My husband is the same way – he usually doesn’t eat until lunch!

Glad you got to make your own breakfast though! ๐Ÿ˜€

OH, and WHO DAT!!! GEAUX SAINTS!!! ๐Ÿ™‚

  7. February 7, 2010 / 2:03 pm

Your breakfast is beautiful! Crazy your husband wouldn’t eat something like that even if you made it for him. It’s strange, I find myself convincing so many of my friends they should eat breakfast, when I find myself just naturally wanting to eat it!

crepes! that’s the luxurious thing about weekends for me too, more time to prepare brekkie. in my casa that translates to pancake sundays! sorry your husband is a “loser” and doesn’t love breakfast, i have a feeling you’ll bring him over to our side eventually!

  9. February 7, 2010 / 2:39 pm

    Good looking breakfast!
I can’t stand it when my hubs leaves hangers in the clothes. Move them to the END of the closet!

  12. February 7, 2010 / 3:22 pm

My boyfriend’s not a breakfast person either. Sometimes he eats a banana, that’s it. I don’t get it!

  13. February 7, 2010 / 3:59 pm

Wow your crepes look amazing! Jealous that you are going to Blogher! I don’t think I can afford it unless they accept me into the volunteer program!

  16. February 7, 2010 / 4:35 pm

Those crepes look delicious. I’m all for cool whip in my breakfast.

I’m also all for the puppy bowl. They’re just so cute.

  17. February 7, 2010 / 5:01 pm

OMG my husband does the same thing with the hangers and it drives me nuts! Fortunately he like breakfast but he likes it way to late for my taste he claims his stomache needs to wake up.
Those crepes look awesome, mmmm more to try.

  18. February 7, 2010 / 9:31 pm

Crepes are something that I really want to conquer. YUM!

So jealous of the conference. I really want to go but can’t take time off from work. You will have to keep us posted.

  19. February 7, 2010 / 10:20 pm

Mmmm, what fabulous breakfasts! I like having breakfast for dinner but can never convince my hubby to do so!.

  20. February 7, 2010 / 10:38 pm

Mmm.. crepes!! They’re beautiful. Tasty too I bet, but for whatever reason I just LOVE oats in the morning. I’ll have to try crepes for dinner. Beakfast is my favorite meal anytime of day. ๐Ÿ™‚

The Blogher Conference last year looked like so much fun! I’ll look into it. I’d love to be there. SF is cheap airfare from Seattle.

And Lily is so stinkin’ cute ๐Ÿ˜€

  21. February 7, 2010 / 10:39 pm

Gorgeous breakfast!! Lily is super adorable!! ๐Ÿ™‚

  22. February 7, 2010 / 10:55 pm

Poor hubby…he doesn’t know what he’s missing. Gosh I love breakfast! Couldn’t go without it if I tried.
I dislike hanger hunting too. Happened this morning….xo
    BlogHer, yippee!!!

  23. February 7, 2010 / 10:56 pm

crepes and pancakes are the same way – the first one is never the best one – wonder why that is

  24. February 7, 2010 / 10:57 pm

Oh, and those crepes…..my those look awesome. I have been using a lot of ricotta lately. great idea here!

  25. February 7, 2010 / 11:14 pm

I never even knew about the hanger hunt! In my world they stay where they were because that’s the section where I’ll need them to be when I go to hang my clothes back up once they’re clean. I don’t have a big closet so I guess it’s just never been an issue that’s occurred to me. Tomorrow morning I’m totally going to worry if I should be doing it differently though – I’m too type A.

  26. February 7, 2010 / 11:18 pm

Wow! I want to have breakfast at your place! ๐Ÿ™‚ The crepes look amazing!

Congrats on going to BlogHer Food! So exciting! I don’t think I can attend, but maybe we can meet up… ๐Ÿ™‚

  27. February 8, 2010 / 12:00 am

Oh yes, your breakfast looks delicious!

  28. February 8, 2010 / 6:43 am

AWESOME!! I’m jealous. That will be such a great time!!

Related to your hubby eating breakfast, Nick used to be a non breakfast eater too. I’ve convinced him otherwise. He still manages to skip it on some days, but if I offer to make him a smoothie or cereal, he will eagerly eat it. It’s almost like he just doesn’t want to make it, that’s why he doesn’t eat it! Men are weird. He could go until lunch without eating if he had to,not me! I can’t barely go an hour after waking up!

The crepes look wonderful. They put my oat bran that I am eating to shame. haha

  29. February 8, 2010 / 7:41 am

crepes look fantastic…loved the presentation of it…

  30. February 8, 2010 / 8:52 am

Oh my….those crepes look perfect! I’ve never understood people who don’t have breakfast. I’m hungriest in the morning/early part of the day – I would be a major GROUCH without food!

That is so exciting about BlogHer!

  31. February 8, 2010 / 9:12 am

The crepes look heavenly! It takes me a few hours after waking up to get hungry. I usually use that time to workout.

  32. February 8, 2010 / 9:58 am

Those crepes look great! You are super talented because they can be hard to work with.

  33. February 8, 2010 / 10:02 am

    Mmmm. Looks delicious!
    I’m definitely a breakfast person too…
Please let us know about the conference… It’s such a great initiative!

  34. February 8, 2010 / 7:13 pm

Breakfast is my favorite meal, hands-down (my hubby doesn’t eat breakfast either, lol!). Your crepes look divine!

  35. February 10, 2010 / 6:07 am

I really REALLY want to go the BlogHer convention–we will see! Anyways, I haven’t made crepes in ages. My favorite flavor combo used to be pumpkin pie ones. You add a little bit of pumpkin pie spice to the batter, then the filling is canned pumpkin, ricotta cheese and walnuts. So good!
