Losers, like my husband.
His lack-luster opinion and participation in breakfast is a pet peeve of mine. It’s right up there with ohhh…leaving hangers scattered throughout clothes so that when you want to hang clean laundry, you first must go on a hanger hunt. *grrr*!!
But in all seriousness, I love breakfast and weekends allow time for creative, fun, and delicious breakfasts! Alone. Husband doesn’t join in. Loser.
Husband is out of town this weekend so there was no raining on my breakfast parade. I decided to try the crepe recipe Jess posted and they turned out great! Nom nom nom!
Saturday morning:
Filling: low-fat ricotta cheese mixed with Cool Whip
Topping: sugar-sauteed blueberries (in a pan over medium heat sautee berries with 1 tsp sugar, until juices being to ooze from the berries)
Sunday morning:
Filling: low-fat ricotta cheese mixed with Cool Whip
Topping: Lower-sugar chocolate syrup and a sprinkling of powdered sugar
Crepes adapted from How Sweet It Is
makes 12-14 crepes 8-10 crepes
1 1/2 cups flour 1 cup whole wheat pastry flour and 1/2 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 cup milk
2 tablespoons melted butter Smart Balance Light
2 eggs
Sift dry ingredients together. Mis wet ingredients (except melted butter), making sure eggs are beat throroughly. Add wet ingredients to dry, and stir until all lumps are gone. Stir in melted butter.
Heat a skillet on medium heat. Use an oil spray to coat the pan. Add batter with a 1/4 cup measuring cup to the hot skillet. Swirl pan to spread batter. Let cook for about 30-60 seconds.
Remove and store in between wax paper while cooking the remaining crepes.
Warning: the first crepe can go to the dog…doesn’t turn out well at all!
Nutrition Information (per crepe, assuming a yield of 8 crepes): 125 calories; 2.6 g.fat; 54 mg. cholesterol; 125 mg. sodium; 18.5 g. carbohydrate; 1.8 g. fiber; 3.5 g. protein
I had big plans for Lily and I to walk a full 2 miles today. But, here’s what we ended up with:
A bit blurry…1.45 miles in 32 minutes and 42 seconds
Mommy burned a meager 133 calories…date with the treadmill later, it is. 🙂 Lazy pup!

I don’t really care about the Super Bowl but it is always more exciting when the underdog wins so if I was rooting for anyone, it would be the Saints for sure. Especially because they are from New Orleans!
I lol’d at the “hanger hunt”! Doesn’t everyone know that immediately upon the clothing being removed from the hanger, the hanger must be re-hung along side the other empty hangers?? C’mon Mr. Prevention RD, get with the program! ๐

Your breakfast is beautiful! Crazy your husband wouldn’t eat something like that even if you made it for him. It’s strange, I find myself convincing so many of my friends they should eat breakfast, when I find myself just naturally wanting to eat it!

crepes! that’s the luxurious thing about weekends for me too, more time to prepare brekkie. in my casa that translates to pancake sundays! sorry your husband is a “loser” and doesn’t love breakfast, i have a feeling you’ll bring him over to our side eventually!

OMG my husband does the same thing with the hangers and it drives me nuts! Fortunately he like breakfast but he likes it way to late for my taste he claims his stomache needs to wake up.

I never even knew about the hanger hunt! In my world they stay where they were because that’s the section where I’ll need them to be when I go to hang my clothes back up once they’re clean. I don’t have a big closet so I guess it’s just never been an issue that’s occurred to me. Tomorrow morning I’m totally going to worry if I should be doing it differently though – I’m too type A.

Related to your hubby eating breakfast, Nick used to be a non breakfast eater too. I’ve convinced him otherwise. He still manages to skip it on some days, but if I offer to make him a smoothie or cereal, he will eagerly eat it. It’s almost like he just doesn’t want to make it, that’s why he doesn’t eat it! Men are weird. He could go until lunch without eating if he had to,not me! I can’t barely go an hour after waking up!

Breakfast is my favorite meal, hands-down (my hubby doesn’t eat breakfast either, lol!). Your crepes look divine!
I really REALLY want to go the BlogHer convention–we will see! Anyways, I haven’t made crepes in ages. My favorite flavor combo used to be pumpkin pie ones. You add a little bit of pumpkin pie spice to the batter, then the filling is canned pumpkin, ricotta cheese and walnuts. So good!
