Overnight Steel Cut Oats

I’ve been eagerly awaiting this day and sharing this recipe with all you fabulous readers. I’ve never made overnight oats and when I saw a recipe that included steel cut oats, I jumped on it! Steel cut oats are my favorite with their chewy, hearty texture.

While these aren’t truly overnight, they require a much abbreviated cook time and are therefore a good option, even for weekday breakfasts. You can also make several servings at a time, doubling or even tripling the recipe. It reheats well, especially with some milk splashed over the top! Mmmm!


Overnight Steel Cut Oats adapted from Good Life Eats and The Novice Chef

1 cup steel cut oats
1 3/4 cups fat free milk
2 Tbsp brown sugar
4 oz (1/2 cup) all-natural, unsweetened applesauce
1 tsp cinnamon
a pinch of salt


In a nonmetal bowl combine oats, brown sugar, applesauce, cinnamon and salt. Stir in milk; cover and chill for 8 to 24 hours.

To serve, transfer oatmeal mixture to a medium saucepan. Heat just to boiling; reduce heat. Simmer, uncovered, for 5-8 minutes or until oatmeal is done, adding additional milk if desired and stirring occasionally.

Remove from heat. Add your favorite mix-ins. Serve with additional milk, if desired. Yield: 2 servings (1 1/4 cup each).

Nutrition Information (per serving): 440 calories; 4 g. fat; 5 mg. cholesterol; 345 mg. sodium; 81 g. carbohydrate; 9 g. fiber; 15 g. protein

Result: Sooo delicious! While they’re not 100% “overnight” and do require some stove time, they reheat well and the cook time is MUCH reduced from traditional stove top steel cut oats. The sweetness is right on and you don’t need any add-ins…it’s fabulous as is! This is also extremely filling…hello, 9 grams of fiber! Enjoy!


While dinner was not homemade last night, Kroger did serve up a pretty mean spicy salmon roll. I was rather impressed – delicious! 😀

I always workout after work on Tuesdays, before weigh-in, however I am having some pretty severe pain in my right foot. It all started in the Vegas airport while heading home, after a LONG day of running and walking. I’m afraid my flat feet in ballet flats and flip flops all weekend are showing their disapproval of my abuse. 🙁 As far as I can tell, it is plantar fascitis rearing its ugly head. I haven’t had an “injury” making exercise a challenge in a LONG time. I may pound out a few quick minutes on the elliptical, but running is out of the question. We shall see…

    Looking delicious! I’ve given up on overnight oats though, because for me they are pointless. I have the 3 minutes in the morning to prepare my oats, and I like them nice and hot! They were fun for a while though.

    I had plantar fasciitis for a while one summer. I stopped wearing flip-flops and it went away. I bet if you wear tennis shoes for three days it will magically disappear.

    I *still* have yet to try steel cut oats! I went with my old standby this a.m. for breakfast….2% Fage with a banana and PB. ๐Ÿ™‚

    I hope your foot feels better! Do you have a boot to sleep in? My sister had PF for years, and she said the boot really helped her. I had some trouble with my foot in January and borrowed the boot, and after a few weeks, it really did feel better!

    Ooo those steel cut oats look SO good! Definitely a hearty filling breakfast!

    Oh NO about your feet! I have flat feet also and have wondered if possibly my shoes are leading to all of these calf/muscle problems I’ve been having. What shoes do you think are best to wear?

      I wear (wide) Asics, but I think it totally depends on the person! Getting fitted it always your best bet.

    Glad your first overnight oats was a success! I’m addicted now and haven’t eaten oatmeal any other way in the past few weeks. I’ve tried it with steel cut oats…definitely doesn’t turn out as creamy, but rather is a little crunchy. So I think cooking them a little is definitely a good idea, and this still cuts down on the cook time a lot, which is nice!!

    Steel cut oats have been the only type of oats that I can say I like! I like the chewy texture, too!

    Plantar fasciitis is stinky! Do you have foam roller or even a tennis ball? You might try rolling your foot on it. It will hurt like heck while you’re doing it, but may give you some relief quicker! Good luck at weigh-in, Nicole!!

    I love steel cut oats! I normally take the pup out for an hour walk in the mornings, so will throw everything on the stove on low while we are out. A quick boil when I get home and they are done!

    This morning, I had traditional overnight oats served on top of a bed of banana soft serve. Delicious!

    I’m actually not a huge fan of steel cut oats because I like my oatmeal to be more creamy and less chewy. For breakfast this morning I had Greek yogurt with homemade granola and a banana!

    I’m going to try this! Making steel cut oats on the stove does take awhile. I’ve tried making them in a crockpot too, but this sounds even better :-).

    Sounds delicious!! I often use the frozen steel cut oats Trader Joe’s sells to save time in the morning, but I’m going to give this recipe a try! My breakfast is normally steel cut oats, greek yogurt or cottage cheese and apple sauce.

    Hope your feet are feeling better today! I had plantar fascitis when I first started running a few years ago. I wasn’t wearing the right shoes. I took about a week off from running (and high heals), was fitted for shoes and haven’t had any issues since.

    This is awesome. I’ve only ever seen overnight quick-cooking oats online and I’m not a fan. (I need my oats to be hot.) And I love steel-cut oats but never make them because they take ages. Thanks for the recipe. I can’t wait to try this.

    Sorry about your foot. Hope it starts feeling better!! I wonder if I have flat feet since my feet will to the same in flats and flip flops.

      Yes, be careful with pancake feet ๐Ÿ™‚ I ran the strip on Saturday and then we walked a TON (probably 5-7 miles) and I was in ballet flats the whole time. Not a good idea!!!

    I’ve actuallly never made steel cut oats but I think my hubby would like this recipe! Anything apple/ cinnamon he adores! He’ll only eat the really sugary packaged oatmeal so maybe this one will change his mind!

    I am not a big fan of oatmeal. I think it’s a texture thing. My favorite thing for breakfast is eggs. This morning I had an omelet with spinach and goat cheese. I also had a piece of Trader Joe’s chicken sausage with it. Yummy.

    I love steel cut oats and being able to shorten the time a ton. I’ve made them overnight in the crockpot too.

    This morning I had a serving of leftover quiche and a serving of pistachios. I love I can eat a bazillion pistachios plus Trader Joe’s sells them shelled so I don’t have to do any of the manual labor.

    I hope your foot feels better! My mother has plantar fascitis and doing the elliptical definitely reduces foot pain. She also has fairly expensive and well supported shoes.

    What a great idea and recipe! I usually don’t have much time as far as prep time for breakfast. I either make something real quick that I can bring to work or get breakfast at work. I like that this can be prepared at night and then ready to heat in the morning. I will have to try it out! Thanks! And I hope that your feet are feeling better! I know when I had bad shin splints it was so frustrating not being able to run.
