All I can say is yum!
I love the sound of this recipe.
I also usually go with corn when it comes to tortillas. Occasionally I’ll pick up whole wheat but I just don’t think it comes to white flour tortillas so I normally skip them all together.

What?! He ate leftovers?!?! Wow, this MUST be a great recipe!!! 😉
I agree with you that tortillas can be very difficult to decide on. IN fact, we have tortilla shells in about 4 different places where I work, therefore when anyone asks me where they are located I even have trouble with THAT! I usually bring them to each place….. too much work.

haha, I hear you on the tortilla selection. We’re pretty much converted to corn tortillas because they are the “cleanest.” I’ve actually grown quite fond of them when heated up properly!

I want to love corn tortillas. It seems like the right “foodie” thing to do. I just don’t, I always prefer flour (unless I’m at an actual Mexican restaurant ordering Enchiladas where they will douse the corn tortilla in some sort of salty good sauce and then top it with cheese). But I do love this recipe. Hopefully sometime in the next few days I will come out of my 5 days of Christmas cookies sugar coma, and eat real food like this. 🙂
