Creamy Radish Dip

When my work schedule looks clear, things ALWAYS go bonkers and the day turns into chaos. Monday was that way and I was putting out fires ALL day. Worse, it started first thing in the morning with the girls and went all the way through evening, ending with the girls. Why they BOTH had accidents at the park that day…I’m still baffled. ::eye roll::

Plus, I was SORE. Physically sore. I’d played hockey for the first time since March (!), followed by tennis on Monday night. Yeah, Tuesday was especially brutal. I woke up feeling like I’d gone 10 rounds. I’ve been working out as much as usual through quarantine, but the variation in my workouts has not been there.

It’s Thursday evening, and I’m back to good. Or nearly good. Which is fortunate because Saturday I’ve committed to a 4 mile run (longer for me to get to/from his place up the road) with a hockey teammate, and Sunday is hockey again. My trial run in renting the ice (assembling and getting payment from a bunch of guys is a near impossible feat…but, did it!) went well, so I’ve rented ice time the next 3 Sundays. It’ll be a fast skate and hopefully by the end of the month, I’m no longer getting sore from hockey.

We have zero plans this weekend AND the weather looks amazing – yahoo! I do believe we will pick peaches at some point because 1. we always do the you-pick thing and 2. my girls LOVE peaches, especially Shea.

I WANTED to post another dessert today – I have both a cherry and a strawberry recipe in queue, however, I try to balance the sweets with the healthy stuff in my neck of the internet woods. PLUS, people are stocked up in produce right now and so those recipes are timely, too.

So, produce recipe, dessert…produce recipe, dessert…rinse, repeat. Soon enough, we’ll be on to chili! Pssst…start rounding up your chili recipes, I’ll be asking for them soon!

I’m pulling one out of the archives for today’s post. I tweaked it after resurfacing it for some patients recently. Seriously, this recipe…it’s one of my favorites because not only is it healthy and delicious, but it’s also a nice surprise. I mean, why else would I get excited about radishes? This dip…the sum is greater than the parts, I PROMISE!

Creamy Radish Dip

Yield: 6 servings (1/4 cup each)

This dip...the sum is greater than the parts. It is SO good. Even if you're on the fence with radishes...you'll enjoy this super simple dip!

Ingredients

  • 1 cup radishes, diced
  • 3/4 cup whole milk plain Greek yogurt
  • 4 green onions, sliced
  • 1 Tbsp fresh dill, chopped
  • 1/2 tsp salt

Instructions

  1. Mix together all ingredients until well-combined. Serve on crackers or with pita chips.
