We’re going from beautiful beach weather to rain to jacket weather to beautiful beach weather and back to rain. Spring is over, summer is here. Supposedly, anyways.
What is here. Truth. Is my birthday. Today. 28. Woo?
Woo!!
I’m not huge into my birthday because somehow, they’re always a let down. I am lowering my expectations every year because when you’re an adult, the show must go on. Work still exists on your birthday. As do all the other big kid things that just aren’t that much fun when you’re not all that young anymore.
I mean, when a good day includes having the energy to workout after work…that’s when you know you’re old. And I’m so there. I mean, who gets sore from strawberry picking anyways? The backs of my knees feel like over-stretched Gumby legs.
Today, however, I’m leaving work early. I’m hanging out with Kristen. And I am going to wish on a lucky star for some killer beach weather and temperatures hot enough that I bolt straight to the freezer for one of these Avocado Ice Pops. It’s not looking good for me and my lucky star, but I’m not giving up hope just yet!
Kristen, unlike some, is adventurous like me. She can very quickly and easily get past the lime green, very avocado-esque color of these pops. Good thing, too, because they are so very refreshing and perfect for the summer that is, eventually, heading my way.
- ¾ cup water
- 6 Tbsp sugar
- 1½ large avocado
- 2 Tbsp lime juice
- pinch of salt
- Combine water and sugar in a small sauce pan over medium-high heat. Bring to a soft boil, stirring to dissolve sugar; remove from heat and set aside to cool.
- In the bowl of a food processor, combine the remaining ingredients and the cooled sugar water; puree.
- Divide mixture evenly among 7 (4 ounce) ice pop molds and freeze for 4+ hours, or until solid. Remove from freezer for 5-10 minutes before serving to easily release from molds.

I’m the same way with my birthdays. I try to lower my expectations each year, and this year, all I wanted was a good dessert. We went to the Cheesecake Factory a week ago to celebrate, and I let my guy pick one out. What was I thinking??? He HATES dessert, especially cheesecake! So despite all of my brilliant plans to lower my expectations, I was still disappointed… But! We were in the parking lot a few days later, and I snuck in to grab a slice of cake to go. Totally worth the waiting for that birthday dessert! π

Happy belated birthday! :). These popsicles look awesome! I just made some similar lime avocado pops that I loooove but I’m waiting to post, but tomorrow I’m posting fudgesicles made with avocado. They are seriously the best thing ever, you have to try some chocolate avocado popsicles π
Don’t feel bad about being sore from strawberry picking…I am 16, and I work on a strawberry farm. I couldn’t walk for three days after my first day of picking! π Happy belated birthday!

First – happy (belated) birthday! You HAVE to love them! Even (especially?) if they’re boring… My grandmama used to say “can’t make it to 100 without passing by ___ first” and apparently 100 is something great to make it to… (She didn’t though but that’s definitely not the point if this story)
