Several months ago, I came up with the idea to do dietitian-guided grocery store tours that helped diabetics better navigate the grocery store with label reading and a carbohydrate controlled diet in mind. Those tours started yesterday – the hour long tours started at 10am, noon, 2pm, 4pm, and 6pm.

When I walked in the door around 7:30pm, I was nearly in tears. My feet hurt SO badly. I should’ve gone with my gut to hang up the little heels for some gym shoes…but I didn’t.

Tomorrow is the same schedule of tours in a different grocery store location, so I’ll be planning my foot attire a bit more wisely. With long days yesterday and tomorrow, I’m off today and now trying to coax myself into a walk on the treadmill. So far, I’ve opted for online shopping and blogging, but with most of the day to myself, I’ll probably get to the treadmill at some point. Maybe after a pedicure….

See? I get myself into trouble when I have a chunk of kid-free time on my hands!

Anyway, the tours were hugely successful yesterday. Participants were engaged and despite giving the same spiel 5 times in a row, my feet were the only thing to give out on me. People asked great questions about food and cooking and it was a fun way to engage with people outside of the clinical setting.

Of course, there was also food involved. We started the tour with a fruit and veggie taste test. I was hoping for jicama and some more “exotic” fruits and vegetables, but we ended up with samples of papaya, pomegranate, and dehydrated pea pods. People were very receptive. At the end of the tour, we served up these Blueberry Chicken Salad Lettuce Wraps and people loved them! They couldn’t believe that Greek yogurt + Italian dressing + honey could come close to recreating mayonnaise, but it surely does!

Blueberry Chicken Salad Lettuce Cups

Serves: 8 lettuce cups with ~1/2 cup chicken salad each
 
Ingredients
  • ½ cup 2% plain Greek yogurt
  • 2 Tbsp Italian Dressing
  • 1 Tbsp Honey
  • ⅛ tsp salt
  • 2 cups skinless rotisserie chicken, shredded
  • 1 cup fresh blueberries
  • 1 apple, peeled, cored and diced
  • ½ cup walnuts, chopped
  • 8 leaves Boston or bibb lettuce
Instructions
  1. In a large bowl, whisk together the yogurt, Italian dressing, honey and salt until well-combined.
  2. Mix in the shredded chicken, blueberries, diced apple, and walnuts until the yogurt mixture is fully coating all of the ingredients.
  3. To serve, scoop chicken salad into lettuce leaves and serve immediately.
