Summertime, whizzing on by. It’s breaking my heart! We’ve had some gorgeous weather and lots of time at the pool, beach, and boating. The AirBnB (our house in summertime) is officially hopping with visitors and Mondays feel like a reprieve from the chaos. But, I wouldn’t have it any other way. I absolutely LIVE for summer!
This summer I’m also playing an epic game of Produce Olympics. Our garden and our CSA box has me being challenged to the max to use all of our local produce before it goes bad. We’re eating a TON of vegetables lately. And while I love the challenge, it has taken a concerted effort and of course, time. Additionally, cucumbers are about the only vegetables my kids consistently eat and enjoy. There are others that they accept, but cucumbers…they love! So, I took the opportunity to use our summer haul to recreate the Kani salad we had back in the spring when we went for sushi following a volleyball tournament. I’d normally say that it’s hard to recreate Japanese food at home, but this Kani salad is beyond simple with only a handful of ingredients and absolutely delicious! We paired this salad with California rolls – my kids love them!

- Cucumber: Use English cucumbers (or persian cucumbers) for lower water content, less seeds, and a crunchy cucumber. You can swap in matchstick carrots, spiralized zucchini, or shredded cabbage, if preferred.
- Crab: The main ingredient! Imitation crab sticks or flake-style (smaller pieces) are fully cooked Pollock (“fake crab”) that is minimally processed and has a slightly sweet flavor. A julienne peeler is a game changer here! It takes a matter of seconds to julienne an entire cucumber. I use this peeler. Don’t worry if you have shorter pieces of cucumber, all good!
How do you prepare the crab to get thin strips or shredded crab sticks?
Use a knife cutting against the “grain” of the fish. You can also shred the crab using your fingers.
Can I make it ahead?
Absolutely. Store each component separately until serving. This type of crab salad actually tastes even better after chilling for 30 minutes, allowing the flavors to blend together.
Can I make it less spicy?
Yes! Simply reduce the amount of sriracha if making homemade or add little bit of plain Greek yogurt or combine mayo with 2-3 tablespoons of the Sriracha mayonnaise to tame the spice.
