I am so whiny when I’m sick…I hate it. I left work at 4pm yesterday and told my clinic manager I had lasted as long as I could. Understatement of the century…I was miserable. …Am miserable.
I felt like this (tears and all):

But in reality, I’m not that cute 😉 and my nose is beat red and so tender from all the nose blowing I’ve been doing. Isn’t that the WORST? When you’re so snotty, tissue is not optional and feels more like sandpaper with each blow. Wah wah wah! 🙁
On a completely unrelated note, I called Mr. Prevention on my way home from work last night and said, “I”m on my way home. You’re on your own for dinner, sorry. I’ve got dibs on the couch and/or the bed. Love you.”
He settled on leftover Spicy Linguine with Scallops, blue corn chip nachos, and Lord only knows how many pounds of Reeses Pieces. What am I going to do with him? As for me, I forced down a bowl of Honey Nut Cheerios after I got up from a nap. If runny nose wasn’t reminder enough of my head cold, my desensitized taste buds and lack of appetite sure are. Wah wah wah! 🙁
But as for today’s recipe, I made it over the weekend and have munched on it throughout the week…
Crazy Feta Dip from Weekly Bite
1 1/2 cups crumbled feta
1/3 cup chopped jalapenos
1/4 cup finely minced red onions
3 tablespoons olive oil
1 tsp red pepper flakes
Directions:
Combine all ingredients in a bowl. Use the back of your fork to gently blend all ingredients together while keeping some chunks of feta intact.
Refrigerate in an airtight container for 4 hours. This step is really important so the flavors and blend together.
Enjoy with pita chips or your favorite cracker. I enjoyed with Whole Foods homemade tortilla chips…which are beyond addicting! Beware! Serves 10.

Result: Very good…and different! Spicy and very rich! Definitely a recipe for the feta-lovers. The dip is very easy to throw together and can be made ahead of time…bonus!
Question: Do you have a favorite appetizer?
I am off to a Diabetes Symposium all day today and tomorrow. I’m really excited! I know I would enjoy it way more if I were feeling 100%, but I’ve been looking forward to this for weeks! Nerdy? I know 🙂 If I’m feeling somewhat better this evening, I think fajitas are on the menu — Mr. P loves them and I can taste those bold flavors…I hope!
Have a fabulous day,
GROSS NICOLE!! I’m sitting here, eating my oats, and I see SNOT !! lol, I’ve lost my appetite. No, not really….but still. What a photo!
I hope you feel better. Ugh, I hate to be sick.
The dip sounds marvelous. And, I wish I was going to that Diabetes Symposium with oyu! I went one year and I actually LOVED it. You’ll have a great time, it’s very informative.
Feel better!! ๐
I’m so glad you liked the dip! Its one of my favorites ๐
I hope you feel better soon!
That sounds great. I love feta.
Feel better soon…ask Mr. P to cook you up some soup for when you get home from work tonight. He owes you–I’ve seen what you make him nightly. ๐
Haha nice picture! Hope you feel better soon Nicole….I hate being sick, its awful. This recipe looks so easy to make and looks awesome. My favorite appetizer is literally anything with cheese it in, when its melted it even better!
Ugh, yuck! I’m so sorry you’re sick. ๐ Any chance/hope of taking a sick day? I get whiney when I’m sick, too! I just miss the days of having someone take care of you…ya know? ๐
I LOVE any appetizer that includes cheese!
Awwww, I hope you feel better soon! I am the BIGGEST baby when I’m sick. I think it kind of gets on my husband’s nerves ๐
Ahh! I need to make this. I have a serious obsession with feta, as in, I could eat it by the block.
Feel better lovely!!!!!!!!! I hate being sick- I always miss my mom when I am sick!
The dip looks delicious! I bet it would be perfect for a party. In fact, Mike and I are planning a little Mediterranean-themed dinner party and this would be the perfect appetizer! ๐ Hope you’re feeling better soon, Nicole!
feta dip looks delicious, loved that you add jalapenos too…
I love feta – but I am a tiny bit afraid of jalapenos…
Feel better. I know this sounds gross, but rub some vasoline on your nose – it will help with the redness!
Hope you feel better soon and have a great time at that conference. Sounds like it’ll be interesting!
I think I was able to avoid the cold. I had a sore throat but now that’s passed and I don’t have any other symptoms. Fingers crossed.
I was going to go to a Diabetes Symposium next week! But the registration fee was wayy too much for me lol Hope you feel better soon!
haha that picture is just lovely!! I hope you’re feeling better, being sick SUCKS.
I woke up with a sore throat and am feeling VERY sorry for myself. Its no fun! ๐
Feel better!!! ๐
I bet that feta and jalapeno combo is delish… kinda reminds me of pepperoncini & feta on a Greek salad!
I am sorry you aren’t feeling well. At least you got to go home a bit early. My work is kind of sticklers about that…even if we are practically on our death bed. Doesn’t make a whole lot of sense to me.
That dip looks great! I am not sure what we are planning on making for our next book club meeting, but I might end up making this!
Hope you feel better!
Out of all the pictures to pick (pun intended)….this is the one you choose hahahaha classic.
feel better lovely
I hope you feel better. this is my favorite appetizer – http://allrecipes.com/Recipe/Avocado-Feta-Salsa/Detail.aspx
I can already taste that dip, just from reading about it! I must make…now. I want to go home early just so I can start eating it sooner.
Hope you’re feeling better! I’m a huge baby when I’m sick and always call my mom crying! LOL!
Crazy feta dip looks awesome! I’m leaving town Sunday for 3 whole weeks and have NO food in my fridge, except, 7 different types of cheeses! Makes me laugh!
