Mini Triple-Treat Cupcakes

I’m coming up from my pumpkin underworld for just a day. To bring you candy corn…and peanut butter. That’s probably a pretty fair trade-off, I’d say.

I saw these on Josie’s blog and I figured that making them after class yesterday was a pretty wise choice, even if that meant swinging by the grocery store in my 3 (and-a-half)-inch red May Jane heels…in the rain. $115 later, I was outta there. HOW DOES THAT HAPPEN!?

Regardless, baking was a very wise choice. And there may have been a Blue Moon Pumpkin Ale consumed in the process…around…oh, 3:30pm. On a Thursday. Guilty.

See, weekend guests necessitate the need for cleaning, which…I’m not very fond of. So instead, I bake! And drink (just one!), apparently. Mr. Prevention loved these so much he didn’t even complain about my lack of cleaning productivity when he got home to find me with mixing bowl and spatula in hand. The powers of food cupcakes. 😀

That said, I feel these should almost be renamed Mini Triple-Threat Cupcakes. While that takes a way the connection to Halloween in the title, the combination of peanut butter cupcake, miniature Reeses cups, and candy corn is not to be taken lightly.

Good thing this recipe makes 48 of these mini cupcakes to bring some Halloween happiness to plenty of people!

Mini Triple-Treat Cupcakes adapted from Everyday Food, October 2011, as seen on Pink Parsley

1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup peanut butter
6 Tbsp unsalted butter, softened
1/2 cup brown sugar, packed
1 large egg
1 large egg yolk
1/4 cup low-fat buttermilk
1/2 tsp vanilla extract
48 miniature Reese’s peanut butter cups
48 pieces candy corn

Directions:

Preheat the oven to 350 degrees and line two 24-cup mini muffin pans with paper liners.

In a medium bowl, whisk together the lour, baking powder, and salt.

In the bowl of a stand mixer fitted with the paddle attachment, beat together the peanut butter, butter, and brown sugar until pale and fluffy. Beat in the vanilla, egg, and egg yolk, scraping down the bowl as needed. With the mixer on low, beat in the flour mixture and the buttermilk just until combined.

Place 2 teaspoons of batter into each muffin cup, then press a peanut butter cup into the center until the batter aligns with the top edge of the candy.

Bake until puffed and set, about 10 minutes. Immediately press the candy corn into the top of each cupcake. Let cool completely in the pans on wire racks before serving. Yield: 48 mini cupcakes.

Nutrition Information (per mini cupcake): 89 calories; 5.1 g. fat; 9 mg. sodium; 59 mg. sodium; 9.9 g. carbohydrate; 0.5 g. fiber; 1.8 g. protein

Result: A peanut butter mini cupcake filled with a mini Reeses peanut butter cup…there’s nothing not to love! Quick & easy to make and coming in at 89 calories a piece…damage control at its finest! 😉 Enjoy!

    I have a family member who makes something similar for our Christmas get-together. I don’t know who, though, because our family is so big that we don’t do a formal dinner- just heavy appetizers and such to grab as you please. I often spend time grazing at the desserts and trying to figure out who made everything…

    These are so adorable! And seriously, triple threat is the perfect name for them. I’d have a hard time having them around the house and resisting eating the whole batch!

    I use baking as an excuse not to clean. And cleaning as an excuse not to study. it’s like an anti-love triangle.

    How cute and festive are these? I only like the first one or two pcs of candy corn, then I don’t like it anymore…it’s weird. Too sweet, I think, and not really any real flavor. I like how they look though…I think they scream Halloween!

    These look super delicious! And I love how they are small and so cute!

    I LOVE candy corn. My goal for the day isn’t to even have one piece. I went a little crazy with it the past few days so I’m making myself take one day off from it. My husband wont eat it so I know everytime I have to refill the candy dish, I’m the reason!

    oh my gosh! These look soo good! I will add them to my Halloween/pumpkin themed list of things to bake to today to postpone cleaning my apartment. And yes I love candy corn, especially the pumpkin shaped candy corn ๐Ÿ™‚

    These are darling! I wish I would have seen this recipe before cause I need to make treats for a bake sale tonight and already went with something else. Oh well, just have to find another reason to whip these up!!

    Hi Nicole. I’m so glad I’m not the only one who goes into the grocery store for one or two items and comes out with one or two BAGS instead. (AND…once, I forgot the item I went in for…duh!) I have never however, gone into a grocery store in 1 1/2 in red Mary Janes! woo hoo!! this is such a fun recipe, thanks for sharing. Have a great weekend.
