BBQ Chicken and Black Bean Tacos + Weekly Menu

Some friends and I were recently discussing what our “ideal” Mother’s Day would look like. Don’t judge me, please…but I said my “ideal” day would include Mr. Prevention getting up early with the kids and then breakfast in bed delivered between 8 and 9am with the girls in tow. I know, so specific. I would come downstairs to flowers and more coffee (latte, preferred). We would go to the park in the late morning with our families and the girls and then during naptime I would head out for mani/pedi/massage. Then after their afternoon nap, we’d head to a local brewery with quality carry-out pizza and I’d be in bed early. Sounds perfect to me!

Because Mr. P’s parents were sick this weekend and couldn’t make the trip to Michigan, we had to promise Shea that grandma and grandpa would be here “soon” (next weekend) and we proceeded to live up Mother’s Day weekend with my parents and brother.

I celebrated on Saturday when my day included tennis, outdoor time (including chasing Harlie…again), and outdoor brewery time complete with pulled pork nachos. We picked up carry-out pizza and enjoyed eating on the front porch before my parents and brother headed back to Chicago. I was in bed by 9:45pm.

I also celebrated today when I was still in bed this morning at 8:15am. Although I did watch a Pampers ad on Facebook at 11:30pm and 3:30am when I was up with Piper (waaah!). Pampers assured me that while she can’t actually thank me, Piper really does appreciate all of my unrecognized parenting. Cute, Pampers. Very cute.

Mr. Prevention got me a super sweet card and we got to church on time. We even had enough time for me to get a picture taken with both of my girls. After church, we went to brunch and afterwards, I got to watch tennis, blog, and write out my grocery list during nap time and while Mr. Prevention planted tomatoes and potatoes in the garden.

I can’t complain. Other than about having to go to the grocery store because 1. it’s so nice out! and 2. it’s MOTHER’S DAY. But I can’t trust Mr. P to pick out horseradish, lacinato kale, or any type of quality yogurt. So, I’ll suck it up and just be sure I carve out a few minutes to read before hitting the hay nice and early. #dreamingbig

When I sat down to blog this afternoon, I hadn’t thought about what recipe to post. But it wasn’t hard for me to decide. Mother’s Day deserves a quick and easy, family-friendly, healthy enough, crowd pleaser. Enter stage right: BBQ Chicken and Black Bean Tacos. I was in a dinner slump until these came into the picture last week. Everyone in your life will adore these tacos – enjoy!

BBQ Chicken and Black Bean Tacos

Serves: 10 tacos
  • 2 tsp olive oil
  • 1 red bell pepper, diced
  • 1 cup frozen whole kernel sweet corn, thawed or 1 ear corn, cut off the cob
  • 1 cup canned no salt added black beans, drained and rinsed
  • 1 lb rotisserie chicken breast, shredded (about 2½ cups)
  • ½ cup barbecue sauce
  • 10 (6-inch) corn tortillas
  • ½ cup plain 2% Greek yogurt
  • ¼ cup cilantro, chopped
  • juice of ½ lime
  1. Heat olive oil in a nonstick skillet over medium-high heat. Once hot, add bell pepper and cook 5-6 minutes or until tender. Add corn and beans and cook 2-3 minutes or until heated through.
  2. Meanwhile, place shredded rotisserie chicken in a microwave safe bowl. Drizzle with the BBQ sauce and microwave 1½ to 2 minutes or until heated through.
  3. In a small bowl, mix the yogurt, cilantro, and lime juice until well-combined.
  4. In each tortilla, place about 1½ ounces chicken with ⅓ cup bean mixture and top with 1 tablespoon yogurt.
