BLT Tostadas

You know you’ve been married a long time when you’ve had the SAME jokes for yeeeeeeears (6 years is a long time, right? 😉 ). You’ll spar openly amongst others, speaking your funny little lingo that no one else understands.

“Turkey bacon with extra nitrates!” Mr. Prevention jabs at me, proclaiming turkey bacon to always be the superior choice with regards to health. Nevermind the fact that nitrates and processed meats are studied in great depths for their link to various cancers and diseases – turkey bacon is his selection. Nitrates welcomed, much to my dismay.

When you live in cool places that have a Trader Joe’s or Whole Foods close by, access to various “health” foods is easy to come by. When you move to small town Michigan? Not so much. We should feel fortunate Greek yogurt and wheat bread are stocked. Or should we? Sad, sad, sad.

Well, until just the other day, nitrate-free turkey bacon was also a item one could find only in the “big cities” and so it was a food we purchased often when stocking up while traveling. On a regular basis? Nitrate free bacon-bacon. The real deal. Swoooooon.

Mr. Prevention was so pleased with his find, especially given that he was sent to the grocery store with the sole purpose of buying bacon for these little BLT Tostadas. It’s basically one big tortilla chip filled with guacamole and bacon. Ahem, what’s not to love? It’s basically nachos with some lettuce and tomato thrown in for good, healthy measure. And color. And texture. And somehow, someway, it’s not so shabby for you.

If you want to use the real deal bacon – rock on. I’m pretty partial to the stuff myself. Baaaaaaaaaacon. But, the (nitrate-free) turkey stuff aint so bad. In BLT Tostada form, it is definitely delicious and satisfies the salty crunch of crispy bacon that makes a BLT so very irresistible.

Serves: 7 tostadas
  • 6 strips nitrate-free turkey bacon
  • 1 large avocado, pitted and diced
  • 3 Tbsp onion, minced
  • ¼ cup cilantro, minced
  • 1 Tbsp fresh lime juice
  • ¼ tsp salt
  • 7 corn tostadas
  • 3½ cups lettuce, shredded or sliced
  • 2 tomatoes, seeded and diced
  1. Cook bacon until crispy; crumble and set aside.
  2. Using the back of a fork, mash the diced avocado until fairly smooth. Add onion, cilantro, lime juice, and salt; mix well. Top each tostada with avocado mixture and then with shredded lettuce, diced tomato, and crumbled bacon. Serve immediately.
