Instant Pot Honey Mustard Chicken

I was recently listening to a podcast that was discussing social media and self-esteem. Of course, we’re all pretty familiar with some correlations here, but it was suggested that those who post the most memes and inspirational messages about health and wellness are the ones who, perhaps, struggle most with healthy living. I don’t know that I totally agree…this, coming from the girl who posted about her 500th Peloton ride all over Instagram and invited all of her IRL and virtual Peloton friends to join on the live ride to celebrate. Thanks for joining, for those who were able! 

What can I say? Anything for a celebration, especially in 2020….2021…amid a pandemic. 

What gets to me more about social media? The time. HOW do people find time to post a new Tik Tok video every day? Aside from the time, I’m jealous of the creative juices it takes to do such a thing. Half the time, I’m staring at a blank WordPress template, scratching my head as to how I can avoid boring you to tears. No easy feat, let me tell you…especially in 2020….2021…amid a pandemic.

What ALSO gets me? And anyone who has made a recipe off of Pinterest can probably agree – HOW do people get their food to look SO good? Liiiike, what I see on Pinterest is NOT what I produce in my kitchen. It’s one of those, “If it looks too good to be true, then chances are it is.” And given that this recipe was so, so simple, and looked so, so good on Pinterest…went the route that rarely fails: reading the reviews in the comments. All signs pointed to GO!

An important thing to know about the Instant Pot (since I know there’s a good chance Santa brought you one if you don’t already own one), is that it’s not all that “instant”. Bringing the contents up to pressure can be time-consuming, especially if recipes don’t use the sauté feature first. So, know that.

That said, this recipe was super simple and quite quick, despite the pressure build time. I did opt for chicken breasts because as much as I want to like chicken thighs, I don’t so much. If you do, however, please consider using them for a juicier result. I’m just a Team Breast kind of girl. Be sure to spoon the honey mustard over the dish before serving for lots of added flavor! A quick, easy, and healthy recipe for a health-forward new year!

Instant Pot Honey Mustard Chicken

Instant Pot Honey Mustard Chicken

Yield: 4 servings
Prep Time: 7 minutes
Cook Time: 8 minutes
Additional Time: 15 minutes
Total Time: 30 minutes

An all-in-one meal that is simple to make and all in the Instant Pot!


  • 3 boneless, skinless chicken breasts (about 1 1/4 lbs), cut in half
  • 1 Tbsp oil olive
  • 1/2 tsp salt and black pepper, to taste
  • ½ cup water
  • 2 cloves garlic, minced
  • ¼ cup honey
  • 2 Tbsp dijon mustard
  • 3 Tbsp stone ground mustard
  • 1 lb baby potatoes, halved
  • 3 carrots, peeled and sliced into 2-inch pieces


  1. Turn on HIGH saute setting. Pour oil into the bottom and allow to get hot.
  2. Season chicken on both sides with salt and pepper; add to the Instant Pot and brown for 2-3 minutes per side. Add water and deglaze the bottom, scraping anything from the bottom of the Instant Pot.
  3. Add the garlic, honey, and both mustards, gently mix. Add the potatoes and carrots; gently mix before securing the lid.
  4. Pressure cook on HIGH for 8 minutes. Perform a quick release and serve hot with the sauce poured over the top.
