Meatless Monday: Crock Pot Cherry Pie Steel Cut Oats


My mom always says, “It’s not what you make, it’s what you spend.”

I know she’s right, but lately, I am in this terrible, no good habit of online shopping. You open my closet and it’s full of suits and business professional clothes for work and then a ton of workout clothes. I’m stylish – for work and the gym. That’s where my style ends.

My 10 year high school reunion was this past weekend and I debated on whether or not to go. The deciding factor was that I couldn’t decide what I would wear it I were to attend, so I opted out. I also opted out of the casino with the guys and had a lame, relaxing night at home.


Anyways, my online shopping habits have gotten a little out of hand. I keep saying that I’m officially saving up for my dream car, but I’m not going to lie…I like to spend the money I see.

Mr. Prevention, however…totally the opposite. The man likes to see money in investments and doing super adult things like paying off our mortgage. Go figure. He’s just so mature!

He will also go to great lengths to save money. Saturday I got pulled to Kohl’s (against my will!) because the Kohl’s card is in my name and we had a 30% off coupon in the mail. Plus, there was Kohl’s Cash to be earned. Needless to say, I struck out and walked out with an all-too-thrilling purchase of nylons for work, and Mr. P hit the jackpot with some dress pants and a shirt.


From our sale at Kohl’s we headed over to Big Lots, where Mr. Prevention proceeded to fill an entire cart and part of second with toilet paper and paper towels. He proudly presented his 20% off coupon and calculated that the toilet paper comes to $0.31 a roll and “that’s a great deal, Nicole!”. Yeah, yeah, yeah. #embarrassing

But I do my fair share of money saving, too. Like using a can of no sugar added cherry pie filling that has been occupying real estate in my pantry for far too long. It may have made the move not only from Ohio to Michigan, but from Tulsa to Ohio, as well. It had to be put to good use and to good use it was put. These oats were divine!


Crock Pot Cherry Pie Steel Cut Oats

Serves: 4
A little something sweet and simple to start your morning off right. Kid-approved, no doubt!
  • 4 cups unsweetened vanilla almond milk
  • 1 Tbsp vanilla extract
  • ¼ cup sucanat or other granular sugar
  • 1 cup dry steel cut oats
  • 1 (20 oz) can no sugar added cherry pie filling
  • 1 cup pitted bing cherries, fresh or frozen
  1. Combine all ingredients in a crock pot and stir. Place the lid on the crock pot and cook on low for 8-9 hours. Stir before serving hot.

    I’ve gotten into the terrible habit of online shopping too. Sitting at a desk all day makes it difficult not to browse at this store or that store or pick up that little item for Christmas. I checked my bank account this morning and it’s taken a serious hit. It’s time to start saving!

    Friend, you and me both on the shopping. I want to drop ALL of my money on cute decor from Pier One for the fall season. It’s bad. But these oats? They’re good. And beautiful.

    I don’t have a shopping gene. I don’t think I’ve bought a piece of clothing at a retail store for at least 20 years – can’t even remember the last time I was even in a Kohl’s – maybe with my Mom last year?

    I made this following the recipe and measuring everything out on a scale. It was a soupy mess! Looks so nice and thick in the pictures. Such a waste of all those ingredients ๐Ÿ™

      Hi Holly! I’m sorry you didn’t get good results. Every crock pot is so different – have you noticed your crock cooking slower with other recipes at all? Again, I’m sorry…hope other recipes are successful for you!

      Did you maybe used cannes cherries instead of cherry pie filling? Because that’s what happened to me lol
