This rainbow fruit salad is the ultimate fresh fruit salad that combines bright colors of the rainbow with a tangy honey lime dressing and a pop of fresh mint! 

WHAT’S NEW?

This week has been the ultimate struggle. The week you go-live on a new electronic medical record is the wrong week to have all the appointments between the girls and I: eye, ortho, hair, you name it! But the weekend is in sight and so I’m feeling as if that’s a big win. The highlight of the week was attending a practice 5K with Shea’s Girls on the Run team. We ran together and she ran the ENTIRE 3.1 miles WITHOUT stopping! She did amazing, I was so, so, so proud of her!

I’m spending tomorrow morning in the kitchen as the chef instructor as a part of the Culinary Medicine program and am looking forward to trivia tomorrow night with Mark and a bunch of hockey friends. On deck this weekend: fruit salad, cause it was THAT darn delicious!

ROLL CALL FOR THIS RECIPE

  • Kid-Friendly: Kids LOVE color and kids LOVE fruit. There’s nothing any kiddo won’t love about this recipe (pass on the mint if you’re unsure, though!).
  • Adaptable: Use your favorite fruit to create the spread of rainbow colors. I recommend using what’s in season and what fruit combinations you enjoy most.
  • Healthy: This makes for the perfect side dish, healthy dessert, or snack. Eat the rainbow!

KEY INGREDIENTS AND SUBSTITUTIONS

  • Fruit: White I used fresh strawberries, ripe bananas, mango, green grapes, kiwi, blueberries, blackberries, and red grapes, there’s no right or wrong! Any combination of different fruits is great. Next time, segmented mandarin oranges or navel oranges as well as fresh pineapple will be my top choices to add!
  • Honey: Pure maple syrup or agave can be used in place of honey.
  • Lime: Use both lime zest and the fresh lime juice to create a tangy, bright honey lime dressing that pulls together all of the flavors of the fruit. In a pinch, use lemon juice or grapefruit juice or a fruit juice, reducing the honey by half as to not create an overly sweet dressing.
  • Mint: The pop of fresh mint in this honey-lime dressing is delicious, but can easily be left out.

VARIATIONS, STORAGE, and TIPS

  • Store leftovers in an airtight container, draining off any excess liquid accumulation
  • Dress the salad immediately before serving or dress in individual portions for best results
  • Mix up the type of fruit you choose to use  based on what’s in-season, on sale, available, and what you love!

FAQ 

Can this dressing be used in other recipes?

​Absolutely! I recommend adding 1/3 cup olive oil and 1/3 cup white wine vinegar or white balsamic vinegar to make into a salad dressing.

Does this recipe NEED the dressing?

Not at all! This recipe can be served without the dressing or a small sprinkle of sugar, if desired.

Is this salad good the next day or is best served the day it’s made?

Best the day of or shortly after dressing as the dressing does pull moisture from the fruit. That said, you can drain any excess liquid from the large bowl and serve for several days. Alternatively you can store the dressing separate from the fruit and dress individual servings, as desired.

This rainbow fruit salad is the ultimate fresh fruit salad that combines fresh, bright colors of the rainbow with a tangy honey lime dressing and a pop of fresh mint! 

Ingredients

Salad:

  • 1 pint strawberries, hulled and sliced
  • 2 mangoes, diced
  • 3 bananas, sliced
  • 3 cups honeydew melon, diced
  • 2 cups green grapes, halved
  • 4 kiwi, peeled and cut into half-moons
  • 2 cups blueberries
  • 2 cups blackberries
  • 2 cups red grapes, halved

Honey Lime Dressing:

  • 1/2 cup honey
  • zest of 1 lime
  • 1/4 cup freshly squeezed lime juice
  • 2 Tbsp fresh mint, finely chopped

Instructions

  1. Place prepared fruit in a large bowl, arranged as a rainbow for a fun presentation or tossed together.
  2. Combine the dressing ingredients in a small bowl or mason jar and whisk or shake to combine,
  3. Pour dressing over salad and gently toss to coat just before serving.
