Vanilla Pumpkin Pancakes


I know there are crazy people out there that enjoy going to the dentist. Unfortunately, I am not one of those people. In fact, I hate the dentist. Passionately. If I weren’t somewhat prideful about the fact that I’ve played ice-hockey for half my life and have all my teeth, coupled with the fact that I think attractive teeth are crucial to a person’s appearance, I probably wouldn’t go to the dentist at all.

Anyways, I had my 6 month cleaning and check-up at the dentist yesterday morning. It was 55 fairly painless minutes (if I’m being honest..) and I was on my way to work. I remembered as I was walking from the last available parking spot, that occupational medicine was offering flu shots. Given that health care workers are basically forced to get flu shots, I begrudgingly headed to the cafeteria to get my flu shot.


 I was greeted by super smiley nurses and next to me, a pediatrician who, somehow, looked less excited than me to be there. He quickly informed the nurse, “I don’t like shots!” I must say, it makes me feel just a smidge better about my hatred for shots when physicians themselves hate shots. But I was brave and kept my whining to a minimum. It was painless…until a few hours later, of course.

After my shot, I finally booted up my computer and got to work. I got started in a conversation with my office mate, the kitchen supervisor, and before long, I was catching whiffs of a terrible scent. Was it her feet? Worse yet, was it my feet? No, it doesn’t smell like feet, it smells like…poop. After a few minutes of thinking the smell would dissipate…it didn’t.


I don’t know what lead me to checking the bottoms of my shoes, but I did. And there, on my heel wedge, was…yeeeaaaaah. As if that wasn’t bad enough, I quickly retraced my morning steps and realized that my disgusting shoes were on the dentist’s exam chair and in very close proximity to the dental hygienist for…nearly an hour. Poor woman. The upside: my staff love laughing at all the embarrassing situations I find myself in.

Needless to say, this all happening before 9am yesterday morning made for a very long day. It made me as excited as ever for a fall weekend without the hustle of life…and of course, pancakes. Weekends mean no timelines or deadlines, no dentists, and most certainly a delicious breakfast. Preferably pancakes. Always.  I hope your weekend shapes up with some of the same!

Vanilla Pumpkin Pancakes

Serves: 6 (2 large pancakes each)
Breakfast classic and pumpkin delight meet to create some magic in these whole wheat, fluffy pancakes made to please!
  • 2¾ cups whole wheat pastry flour or white wheat flour
  • 1 tsp salt
  • 2 Tbsp baking powder
  • 3 Tbsp sugar
  • 2 cups pumpkin puree
  • 2 eggs
  • 4 tsp vanilla extract
  • 2½ cups nonfat milk
  • 1 Tbsp pumpkin pie spice
  1. In a large bowl, combine flour, salt, baking powder and sugar, whisk to combine.
  2. In a second large bowl, whisk together pumpkin, eggs, vanilla, milk and pumpkin pie spice.
  3. Add the wet ingredients to the dry, stirring with a spoon.
  4. Heat a nonstick electric griddle over medium heat until hot. Scoop batter by heaping ⅓ cups onto the griddle, using the back of the measuring cup to spread the batter (it will be thick). Cook pancakes 3-4 minutes or until bubbles form on the surface; flip and cook an additional 1-2 minutes. Serve hot.

    Oh my, I can remember those times, stepping in poop, and realizing it only after about an hour of smelling it and thinking, “why is this following me?!”. haha, ugh.
    The pancakes sounds wonderful. I’m hoping to make you pumpkin breakfast “souffle” from your cookbook this weekend!

    I love new pancake recipes – and especially anything with pumpkin this time of year! I’ve made pumpkin pancakes in the past that were pretty dense, I love that you say these are nice and fluffy. Can’t wait to try them! Hope your weekend is going better than your Friday!

    I just made these for breakfast and they were delicious! My family loved them which is a big plus. I made a few changes to suit me. I used 1.5 cups light vanilla almond milk to replace some of the skim milk. I also used one whole egg and I egg white and replaced 1 table spoon of the sugar with stevia (trying to get that used up because I don’t like it). Just in case anyone is interested that changed to nutritional info a bit. I got 288 calories, 2.6 fat, 11.2 protein, 57.8 carbs, 9.7 fiber and 35.8 cholesterol.
