I don’t think I deal with stress well. At all. And it’s true that people FEEL when you’re stressed. At least that’s the case with me. I can’t hide it, anyway. My oldest reads my mood so quickly and she takes on my stress herself…in about 2 seconds, flat.
Between the bus stop and our house, all of a 2 house-long walk, she had changed moods and started pushing buttons. No, you may not go to your swim lesson in the string bikini someone decided to gift to a little girl. You don’t want to wear a coat? Or pants? Ooookay. It’s only February in Michigan.
I piled them in the car, took some DEEP breaths as I walked around the backside of the car to the driver’s seat, and re-started the few hours I get with the girls. I asked in a very loving, calm voice if she had an okay day at school and it all spilled out – an issue on the playground, kids who weren’t listening that resulted in a cranky teacher (her words!), and a few other little things…but BIG things to a little girls.
Within a mile, after listening and acknowledging her bad day, we were suddenly allllllll good. I know this is 101 stuff, but I STRUGGLE y’all. We’re through our recent fun with COVID, but work and work-life balance are kicking my BUTT. There is no quicker way to my short fuse than to rob me of my workout 2 days in a row. I’ve got a little system and plan for the 4-6pm window each day and any disruption to that can send me into a bit of a tailspin.
What can I say? I’m working on it! A dinner plan is definitely a key to (more) success. Bonus if it’s a meal the whole family will love. And fortunately for me, my crew will all eat White Chicken Chili.
There’s never many white chili recipes in my annual chili contest, so I will typically make it once or twice each season. You know how much we love our chili! There’s something about this broth-based chili that is the perfect comfort food with staying power and note-worthy nutritional merits. #fiber! That bit of heat and the creaminess from the bean puree is the perfect combination!
White Chicken Chili
A traditional white chicken chili made creamy with pureed white beans and mildly spicy from diced chiles and jalapeno!
Ingredients
- 2 Tbsp olive oil
- 1 onion, diced
- 1 green bell pepper, diced
- 1 jalapeno, seeds removed and finely diced
- 2 (15 oz) cans white beans, drained, rinsed, and divided
- 4 cups low-sodium chicken broth, divided
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp salt
- 7 oz diced green chiles
- 7 oz diced green chiles
- 1 lb shredded rotisserie chicken
- 1 lb shredded rotisserie chicken
- 1 cup frozen corn
- 1 cup frozen corn
- 1/4 cup chopped cilantro
- 1/4 cup chopped cilantro
- 1 Tbsp lime juice
- 1 Tbsp lime juice
- 1 avocado, sliced
- 1 avocado, sliced
Instructions
- Heat olive oil in a large pot over medium heat. Once hot, add the onion, bell pepper, and jalapeno. Cook for 4 minutes or until tender; stirring often.
- Meanwhile, in a mini food prep, blender, or manually with the backside of a fork, blend one cup of the white beans with one cup of the chicken broth until smooth or few lumps remain; set aside.
- Add the garlic and spices (cumin through salt) and stir for another minute, until fragrant.
- Add the chicken broth and pureed bean mixture; stir and simmer uncovered for 15 minutes.
- Stir in the green chilies, chicken, corn, white beans, and chopped cilantro. Simmer 2-3 minutes before adding the lime juice; stir well.
- Serve hot with sliced avocado.
