Toasted Sesame Chicken Salad + Weekly Menu

My heart is full and so is my stomach. A weekend of family and lots of good food! The weekend ends with a bittersweet day, marking 2 years since our bulldog, Lily, went to heaven. We miss our girl every day – she was simply the best.

In fact, TWICE just yesterday Piper said these very words to perfect strangers on our hike: “Can I pet your dog? I have a dog at home named Harlie and I have another dog named Lily, but she’s in heaven.” Srsly, she’s the cutest. Melt my little heart with her 3-year-old wisdom, warmth, and language. Of course the strangers were struck with her cuteness, too. 🙂

My girls were reunited this weekend with their (nearly) 1 ½ year old cousin, Ava. She’s absolutely darling and has this perfect skin. She loves her food (yasss!) and was VERY tolerant of all the hugs and carting around my 2 dished out. Shea and Piper wanted to carry her everywhere while she was actively trying to get 2 feet on the ground, at full speed…at all times.

I forgot how exhausting toddlers can be!

My littles are gaining independence by the day and I’m honestly not accustomed to Shea, my 5 ½-year-old, ducking into her own room for extended periods of time. Door shut, playing…CLEANING (!?). She’s such a little adult in-the-making and as amazing as that is, so much of me wants to hold on to her relying on me for….everything.

No one tells you this whole parenting thing is a total rollercoaster, my goodness! And as much as my girls get along beautifully (98% of the time) and are the best of friends, they’re soooo totally different. While Shea is making her bed and organizing her books, Piper is off making goofy faces and likely making a mess of some kind. Or eating.

Piper continues to ask for “Caesar salad” in her lunch. Every day. Even on the weekends, she requests Caesar salad. Perhaps because of her, I’ve gotten into salads for lunch, too. I kind of ebb and flow with salads. Currently: LOVE! I’m trying all sorts of new ones and a recent favorite was this Toasted Sesame Chicken Salad. It’s a bit a cheat with rotisserie chicken and the pre-made dressing, but that’s kind of what makes it 1. amazing and 2. worthy of being on the next Healthier in a Hurry podcast episode! Enjoy!


Toasted Sesame Chicken Salad

Serves: 4 meal-sized salads
 
Ingredients
  • 1 head romaine, chopped
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • ½ cucumber, peeled and sliced into half-moons
  • 9 oz (2 cups) shredded rotisserie chicken
  • 1 cup toasted sesame salad dressing
  • 1 (15 oz) can mandarin oranges in 100% juice, drained
  • ¼ cup slivered almonds
  • ½ cup chow mein noodles
  • 1 avocado, diced
  • 1 bunch green onions, sliced
Instructions
  1. In a large bowl, combine the romaine lettuce, cabbage, carrots, cucumber, and chicken; toss to combine. Drizzle with the dressing and toss to coat.
  2. Divided the salad onto 4 plates and top with ¼ of the mandarin oranges, almonds, chow main noodles, avocdo, and green onion.
