This weekend was supposed to be pretty amazing.

Mr. P and I have both been incredibly busy at work and his parents were planning to come up for the weekend to see the baby. We had bought tickets to the Michigan State vs. Illinois basketball game in Lansing, about 2 1/2 hours away and we were all pumped and excited to go – a day date, just the two of us, rooting on our alma mater. After the game we were going to go out with friends and enjoy a kid-free night with some adult beverages and no dishes to clean up. 🙂

And then came Friday…

I woke-up feeling a bit…off, and just figured I needed to have my coffee and breakfast after a late night playing hockey and not enough sleep. Per the usual, I called my mom on my way to work and told her how poorly I was feeling. I got to work and tried to plow through the day but by 10:30am, my staff were bringing me Sierra Mist and telling me I wasn’t looking so great. I’ll spare you the details of what came next, but I felt relief after getting sick. I left the hospital around 12:45 to get Shea to her 4 month appointment and while waiting (forever) to get called back to a room, I began feeling a bit queasy again. The room we were assigned was super warm and despite not feeling well, I held it together because I knew baby girl was getting her shots and needed me.

As we were checking out at the reception desk, a wave of dizziness came over me and I asked if I could sit down. The staff got me water and a lollipop as Shea hung out with the receptionist. I broke out into an intense sweat and the office was insistent on calling Mr. P so he could drive us home as I was in no condition to drive.

We got stuck behind every slow-moving vehicle and bus on our way home where I proceeded to get sick again and then piled into bed for a 3 hour nap. When I got up, Mr. P informed me that he had canceled his parents coming up for the weekend and sold our basketball game tickets. I was totally bummed.

I slept most of the evening and through the night on Friday and by yesterday, was back to 100%. I have no idea what it was but a 24 hour flu or food poisoning are the only reasonable explanation. Of course Illinois won the game and it would’ve been a great game to attend. Uggggggggh. Three weeks of viral junk, pink eye, and then flu/food poisoning. I think I’ve paid my sick dues for the year already.

As sad as I was about missing the game, the weekend at home as been relaxing. Now that I have my appetite back, I decided to treat us to a delicious breakfast of Banana Nut Waffles. I had made these a few weekends ago when my parents were visiting and they were a hit. Simple to make and with just enough sweetness to feel sinful, they’re the perfect weekend morning choice. Enjoy!

Banana Nut Waffles 4

Banana Nut Waffles

Serves: 4 servings
  • 1½ cups white whole wheat flour or wheat pastry flour
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ tsp nutmeg
  • ½ cup chopped walnuts or pecans
  • 1 egg
  • ⅓ cup coconut oil, melted and cooled to room temperature
  • ¾ cup unsweetened vanilla almond milk, warmed for 20 seconds in the microwave
  • ¾ cup overripe mashed bananas (about 2 small bananas)
  • 1 tsp vanilla extract
  1. Heat waffle iron (medium-high temperature setting, if required).
  2. In a medium bowl, whisk together the flour, sugar, baking powder, salt and nutmeg. Stir in the chopped nuts and set aside.
  3. In a second medium bowl, whisk together the egg and coconut oil. Add almond milk, mashed banana, and vanilla extract; whisking well.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Pour batter onto the heated waffle iron, and cook 3-4 minutes or as specified by the waffle maker. Serve hot.
