I admit it. I love Valentine’s Day. I honestly expect just a single nice gesture from my husband – a bouquet of flowers, a nice card, or a dinner reservation. Truly, just one of these things is enough to make me feel loved.
Perhaps it’s because my love language is Words of Affirmation that I love Valentine’s Day so much. My husband does a lot well, but giving my words of affirmation is not one of them. Not even close. They end up sounding insincere or just straight up ridiculous.
Mark giving me words of affirmation literally goes something like:
Thanks for taking a shower today.
Thanks for never again making that cold avocado soup from 8 years ago.
Since having kids, his skills have actually improved because he will, on occasion, say something like:
Thanks for being a great mom to our kids.
Usually, his affirming words come by way of card – almost as good as spoken words of affirmation in my book. But, I do appreciate the effort and usually, he can’t be as facetious or silly in a card as he can be when talking.
In general, though, Mark is a fabulous gift-giver. Somewhat unfortunate for us both is that gifts is my 5th ranked love language for both giving and receiving love, but…we’ll go with it. He’s great at surprises and just really over-the-top gifts and surprises. Last Christmas? An iPad Pro. Three years ago? Private tennis lessons (I have played weekly ever since).
Since he doesn’t read my blog, I can share with you all the gift I got him for Valentine’s Day – a couples massage! A bit self-serving, but we’ve been anxious to try out a new spa in town and it can be our little one-on-one time before Spring Break in a few weeks. I’m excited and I think he’ll really like it. Shhhhh.
What he also liked? A week or so early (sorry, not sorry), were these Red Velvet Donuts. He was crazy enough to prefer just a light coating of this finger lickin’ good cream cheese frosting, but I guess to each their own. Show your sweetie some love with these beauts!
- 3 cups all-purpose flour
- 6 Tbsp cocoa powder
- 1 cup brown sugar
- 1½ tsp salt
- 1 Tbsp baking powder
- 1⅓ cup low-fat buttermilk
- 7 Tbsp coconut oil, melted and cooled
- 1 Tbsp pure vanilla extract
- 3 eggs, at room temperature
- 2 Tbsp red food coloring
- 8 oz reduced fat cream cheese, at room temperature
- 3 Tbsp butter, melted
- 2 cups powdered sugar
- 2 Tbsp whole milk, plus more if needed
- Preheat oven to 350 degrees F. Mist donut pan(s) with nonstick cooking spray and set aside.
- In a large bowl whisk together the flour, cocoa powder, brown sugar, salt, and baking powder. In a separate bowl whisk together the buttermilk, melted coconut oil, vanilla, and eggs. Gently fold the wet mixture into the dry mixture.Fold in red food coloring and stir until combined.
- Spoon mixture into prepared donut pan, filling just over half full. Bake for 10-12 minutes, or until the donuts spring back when lightly pressed. Allow doughnuts to cool a few minutes in the pan before transferring to a wire wrack to cool completely.
- Meanwhile, mix together all frosting ingredients in a small bowl. Spread frosting on cooled donuts.
